  • cups fresh blueberries

    tsp minced peeled fresh ginger

    tsp grated lemon zest

    cup reduced fat baking mix

    TB fat free milk


Preheat oven to 400 F. Spray 2 six ounce custard cups with nonstick spray. Combine the blueberries, 2 TB of the sugar, the ginger, lemon zest, lemon juice, and cinnamon in a medium bowl. Divide the blueberry mixture between the custard cups. Combine the baking mix and milk in a small bowl. Spoon batter over the blueberry mixture and sprinkle with the remaining 1/2 tsp of sugar. Place the custard cups on a small baking sheet. Bake the cobblers until the topping is golden and the filling is bubbling, about 20 minutes.
