Lightly spray an unheated medium skillet with no stick spray
- 1/2 medium onion, chopped
- 5 slices turkey bacon, chopped
- 4 oz ground beef (80% lean)
- 1 (16 oz) can vegetarian beans in tomato sauce
- 1 (16 oz) can vegetarian baked beans
- 1 (16 oz) can red kidney beans, rinsed and drained
- 1/2 cup tomato sauce
- 2 TB brown sugar
- 1 - 2 tsp liquid smoke
- 1/2 tsp maple flavoring
Lemon Pepper Cod

- 4 (6 0z) skinless boneless cod fillets
- 4 tsp olive oil
- 1 1/2 tsp lemon and pepper seasoning
- 2 tsp grated lemon zest

- 1- 7 oz can tuna
- ¼ c chili sauce
- 1 tsp minced onion
- ¼ tsp salt
- 1/8 tsp oregano
- 1 small loaf party rye

Cod with Parsley Sauce

In a medium skillet over medium heat, heat the milk
- 1 cup low fat milk
- 1 1/4 pounds cod fillets, cut into 4 pieces
- 4 tsp reduced calorie margarine
- 3 TB all purpose flour
- 1/4 cup low sodium chicken broth
- 2 TB minced parsley
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
Peanut Butter Pie

Spoon 1/2 cup fudge sauce into bottom of pie crust
- 3/4 cup chocolate fudge topping, divided
- 1 Keebler ready crust graham cracker pie crust
- 1 8 oz tub Cool Whip whipped topping, thawed
- 1 1/4 cups cold milk
- 1/2 cup creamy peanut butter
- 2 pkg (4 oz sizes) Jello Vanilla flavor instant pudding and pie filling
Scootcheroos Rice Krispie Bars

Cook syrup and sugar until it starts to boil
- 1 cup light Karo syrup
- 1 cup sugar
- 1 cup peanut butter
- 6 cups Rice Krispies
- 1 cup chocolate chips
- 1 cup butterscotch chips
IRISH CREAM BREAD PUDDING

Combine bread, milk, liqueur, cover and refrigerate 1 hour; stir occasionally

- 1 - 1 lb loaf raisin bread, torn into small pieces
- 3 ¼ c milk
- ¾ c Irish cream liqueur
- 1 TB butter
- 1 ½ c sugar
- 4 eggs
- 1 TB vanilla
- ½ c raisins
- 1 c powdered sugar
- /2 c butter
- 1 egg
- ¼ c Irish cream

Spread crumbled corn bread in a shallow baking pan
- 2 cups crumbled corn bread
- 4 boneless pork loin chops, cut 3/4 inches thick (1# total)
- 1/2 cup chopped onion
- 1/4 cup chopped red and/or green sweet pepper
- 1 TB snipped fresh sage or 1 tsp dried sage, crushed
- 1/2 tsp dried thyme, crushed
- 1/4 tsp black pepper
- 1/2 cup frozen whole kernel corn, thawed
- 1/2 cup finely chopped apple
- 1/2 cup reduced sodium chicken broth
- 2 TB apple jelly, melted
- Fresh thyme or sage sprigs (optional)

- 1 4-ounce can diced green chilies (buy mild, if you prefer)
- 1 ounce packet taco seasoning mix
- 1 cup shredded, reduced-fat cheddar or Monterey Jack cheese
