Creamy Cannellini Bean Soup

Puree the broth and beans in batches in a blender; set aside in a large bowl
- 5 cups reduced sodium chicken broth
- 3 cups rinsed drained canned cannellini (white kidney) beans
- 1 TB olive oil
- 12 baby carrots, thinly sliced
- 1 onion, finely chopped
- 1 red bell pepper, seeded and finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1/4 cup fresh lemon juice
- 1 tsp dried thyme
- 1/8 tsp salt
- freshly ground pepper to taste
- 2 TB finely chopped fresh flat leaf parsley
CHERRY CAKE

Pour pie filling and pineapple in bottom of greased 9x13 inch baking pan
- 20 oz can cherry pie filling
- 20 oz can crushed pineapple
- 2 sticks margarine or butter, melted
- 1 cup flaked coconut
- 1 cup chopped pecans
Merry Christmas Meatballs

- 1 (12 oz) bottle Heinz chili sauce

- ¾ c sugar
- 1 TB poppy seed
- 2 tsp baking powder
- ½ tsp salt
- 1 c cut-up fresh or frozen (thawed) strawberries
Cake-Pistachio

Cake: Mix all together except soda; once mixed add the soda and mix together
- Frosting:
- White or Yellow cake mix
- 3 egg whites
- 1 tsp vanilla
- 8 oz plain fat free yogurt
- 1 small box pistachio instant fat free sugar free pudding
- 12 oz can of diet lemon lime soda
- 1 1/2 cups skim milk
- 1 small box instant pistachio fat free sugar free pudding
- 8 oz tub of Cool Whip Free
WARM WINTER LEMON CAKE

Preheat oven to 350. Prepare cake batter as directed on package
- 1 pkg (2-layer size) yellow cake mix
- 2 cups cold milk
- 1 ¼ cups water
- 2 pkg (4 serving size each) Jello lemon flavor instant pudding and pie filling
- 1/3 cup granulated sugar
- 2 TB powdered sugar
Frosted Carrot Cake

Preheat oven to 375. Spray a 9" bundt pan with nonstick cooking spray
- 3/4 cup all purpose flour
- 1/2 cup yellow cornmeal
- 1 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp ground ginger
- 1/2 cup thawed frozen apple juice concentrate
- 1 egg
- 1/4 cup fat free milk
- 2 TB + 2 tsp vegetable oil
- 2 TB packed dark brown sugar
- 1 cup shredded carrots
- 1/2 cup golden raisins
- 1/2 cup light cream cheese
- 1 TB honey
Cream Cheese Topping

Combine milk and pudding. Beat at low speed to mix well
- .9 oz box sugar free vanilla pudding
- 2 cups skim milk
- 6 oz cream cheese
Strawberry Glaze

Boil 5 – 7 minutes. Cool and add berries
- 1 cup sugar
- 1 cup water
- 3 TB cornstarch
- 3 TB white Karo syrup
