Banana Nut Muffins

Ingredients
- 2 cups all purpose flour
- 1/4 cup sugar
- 1 TB baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 egg (I use 1/4 cup egg beaters)
- 1/3 cup vegetable oil (I use 1/3 cup apricot nectarine)
- 3/4 cup mashed banana
- 1/2 cup chopped walnuts

Step 1
Preheat oven to 400 degrees. Grease a 12 cup muffin pan.
Sift flour, sugar, baking powder and salt into medium bowl; make a well in center.
Mix milk, eggs, oil (or nectarine) banana, and walnuts in a small bowl. Pour mixture into well.
Mix batter just until moistened; do not over mix.
Spoon batter into prepared muffin cups. Bake until a toothpick inserted in center comes out clean or until muffins are golden brown, about 15 minutes.
Weight Watchers Plus Points per muffin using egg beaters and apricot nectarine is 3.5 points per muffin.
(Variation: Blueberries or raisins may be substituted for the mashed banana in this versatile muffin batter.)
