1. Preheat the oven to 350 degrees
- 1 Homemade pie crust, unbaked
- 8 slices bacon
- 1/2 onion, chopped
- 1/2 cup shredded cheddar cheese
- 1 cup Swiss cheese
- 1/2 cup freshly grated parmesan cheese
- 4 large eggs, lightly beaten
- 1 cup heavy cream
- 1 cup milk
- 1/4 teaspoon ground nutmeg
- 3/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Crispy Oven-Baked Chicken

In a shallow bowl, combine the first nine ingredients
- 1-1/4 cups crushed cornflakes
- 1 teaspoon onion powder
- 1 teaspoon poultry seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon dried thyme
- 1/2 teaspoon pepper

Pumpkin Roll Bars

Cake: Spray 9x13 pan with cooking spray
- Cake:
- 6 T. melted butter
- 1-1/2 c. sugar
- 2 eggs
- 1 (15 oz.) can pumpkin
- 1/4 c. water
- 2 c. flour
- 2 tsp. cinnamon
- 1/2 tsp. each cloves, ginger, nutmeg
- 1 tsp. baking soda
- 1 tsp. vanilla
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- Cream Cheese Filling: (May be doubled)
- 1 pkg. (8oz.) softened cream cheese
- 1/4 c. sugar
- 1/2 tsp. vanilla
- 1 egg
Spinach and Fontina Breakfast Bake

1. Cook spinach and drain well
- 1 lb. spinach or fresh asparagus
- 6 Panera Bread French Croissants
- 2 cups (8 ounces) grated Fontina cheese (mozzarella, provolone, Gruyere
- or sharp cheddar can be substituted)
- 1/2 red bell pepper, chopped
- 8 eggs, lightly beaten
- 2 scallions, finely chopped
- 3 cups 2% milk
- 2 tablespoons finely chopped fresh parsley
- 1 tespoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dry mustard
- Pinch of nutmeg
Asparagus Casserole w/potatoes

Slice potatoes and put in baking dish; dice onions and put on top; put asparagus on top
- 5 potatoes
- 2 onions
- 2 c. asparagus
- 4 slices cheese
- 1/4 c. butter
- salt and pepper
Cucumber Onion Salad

Pull tines of fork firmly down length of cucumber, repeating around cucumber; slice thinly
- 1/2 cucumber
- 1/4 medium onion
- 1/4 cup vinegar
- 1/4 cup water
- 2-3 tsp. sugar
- 1/8 tsp. salt
- dash of pepper
Onion Soup with sausage

In a large saucepan, cook sausage over medium heat until no longer pink; drain
- 1/2 lb. sausage links, cut into 1/2 inch pieces
- 1 pound sliced fresh mushrooms
- 1 cup sliced onion
- 2 cans (14-1/2 ounces each) beef broth
- 4 slices Italian bread
- 1/2 cup shredded part-skim mozzarella cheese
Grandma's Fruit Salad

Drain pineapple, reserving juice in a 1-cup measuring cup
- 1 can (20 ounces) pineapple chunks
- 1 can (15 ounces) sliced pears, drained
- 1 can (15 ounces) sliced peaches, drained
- 1-1/2 cups seedless red grapes
- 1 package (3 ounces) cook -and-serve vanilla pudding mix
- 3 tablespoons lemon juice
- 1 jar (10 ounces) maraschino cherries, well drained
Honey-Mustard Pork Scallopini

Flatten pork to 1/8 inch thickness
- 4 boneless pork chops (about 4 ounces each), trimmed
- 2 tablespoons honey
- 2 tablespoons spicy brown mustard
- 1/3 cup crushed butter-flavored crackers (about 8 crackers)
- 1/3 cup dry bread crumbs
- 1 tablespoon vegetable oil
- 1 tablespoon butter or margarine
