1. Place chicken in a large resealable plastic bag; add limeade concentrate
- 4 boneless skinless chicken breast halves (5 oz. each)
- 3/4 cup thawed frozen limeade concentrate
- 1 large onion, sliced
- 1 medium sweet orange pepper, julienned
- 1 medium sweet yellow pepper julienned
- 2 Tbsp. canola oil
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 flour tortillas (10 in.)
- 1 cup (4 oz.) shredded Monterey Jack cheese
- 1 cup (4 oz. shredded cheddar cheese
- 2 Tbsp. butter, melted
- 1 Tbsp. lime juice
- 1 Tbsp. chopped fresh cilantro
- Lime wedges optional
Twice-Baked Potato Casserole

Cut baked potatoes into 1-in
- 1-1/2 lbs. red potatoes (about 6 medium), baked
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound sliced bacon, cooked and crumbled
- 3 cups (24 ounces) sour cream
- 2 cups (16 ounces) shredded mozzarella cheese
- 2 cups (16 ounces) shredded cheddar cheese
- 2 green onions, sliced

- GLAZE:
- 2 cups all-purpose flour(I use 1/2 whole wheat & 1/2 white)
- 1 cup rolled oats (quick or old fashioned, uncooked)
- 1/4 cup granulated sugar plus
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 8 tablespoons unsalted butter or 8 tablespoons margarine, chilled and cut into pieces
- 3/4 cup milk
- 1 egg, lightly beaten
- 1 teaspoon vanilla extract
- 1/2 cup toasted chopped pecans
- 2 teaspoons ground cinnamon
- 3/4 cup confectioners'sugar
- 3/4 teaspoons orange juice or 3-4 teaspoons milk
