Taco Casserole

Cook pasta according to package directions
- 3 cups uncooked bow tie pasta
- 1 lb. ground beef
- 1/4 cup chopped onion
- 2 cups (8 ounces) shredded cheddar cheese
- 1 jar (16 ounces) salsa
- 1 can (14-1/2 ounces diced tomatoes, undrained
- 1 envelope taco seasoning
- 2 cups nacho tortilla chips, crushed
Mrs. Field's Cookies

Cream together butter and sugars
- 1 c. butter
- 1 c. sugar
- 1 c. brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1-1/2 c. chopped nuts
- 2 c. flour
- 2-1/2 c. oatmeal (put in blender and grind to a powder)
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 12 oz. bag chocolate chips
- 4 oz. plain Hershey's bar, grated (I used Dove chocolate sometimes.)
Crunchy Romaine Strawberry Salad

Discard seasoning packet from ramen noodles or save for another use
- 1 pkg. (3 oz.) ramen noodles
- 2 cup chopped walnuts
- 1/4 cup butter
- 1/4 cup sugar
- 1/4 cup canola oil
- 2 Tbsp. red wine vinegar
- 1/2 tsp. soy sauce
- 8 cups torn romaine
- 1/2 cup chopped green onions
- 2 cups fresh strawberries, sliced
Sausage-Stuffed Shells

In a pan, cook sausage over med
- 1 lb. bulk sausage
- 16 oz. can tomato sauce
- 1/2 cup tomato paste
- 2 tablespoons water
- 1 teaspoon brown sugar
- 1/2 teaspoon Italian seasoning
- 2/3 cup cottage cheese
- 1-1/2 cup shredded part-skim Mozzarella Cheese
- 2 tablespoons beaten eggs
- 1/2 teaspoon minced fresh parsley
- 15-16 jumbo pasta shells, cooked and drained
- Grated Parmesan cheese, optional
Vegetarian Chili

Spray a skillet with Pam. Saute turkey and onions until brown
- 10 oz. ground turkey
- 1 onion, diced
- 2-28 oz. cans diced tomatoes
- 1 medium zucchini, diced
- 1 medium yellow squash
- 1 - 15 oz. black beans, rinsed & drained
- 2 - 5 oz. fat-free reduced sodium beef broth
- 1 - pkg. chili seasoning
- 1 green pepper, chopped
Chicken Tortellini

Cook tortellini according to package directions
- 1 pkg. (19 oz.) frozen cheese tortellini
- 1 lb. boneless skinless chicken breasts, cut into 1-in. pieces
- 2 Tbsp. butter
- 1/2 small sweet red pepper, julienned
- 2 garlic cloves, minced
- 3 cups reduced-sodium chicken broth, divided
- 1/3 cup all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. grated lemon peel
- 1/2 tsp. hot pepper sauce, optional
- 1 pkg. (6oz.) fresh baby spinach
- 6 Tbsp. shredded Parmesan cheese
Spaghetti Sauce

1 cans tomato paste, 2 cans of water, 1 can tomatoes, 1 can of water
- Add the following:
- 1 onion, finely chopped
- 1 green pepper, chopped
- 1-1/2 lbs. hamburger
- Place in large pot and brown meat until meat is no longer pink, drain.
- 1 tbsp. parsley
- 1 tbsp. basil
- 1 tbsp. oregano
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 pkg. Spaghetti Sauce w/mushrooms (I use McCormicks)
Tomato Bacon Cups

In a small bowl, combine the tomato, mayonnaise, bacon, cheese, onion and basil; set aside
- 1 small tomato, finely chopped
- 1/2 cup mayonnaise
- 1/2 cup real bacon bits
- 1/2 cup shredded Swiss cheese
- 1 small onion, finely chopped
- 1 teaspoon dried basil
- 1 tube (12 ounces) refrigerated buttermilk biscuits, separated into 10 biscuits.
Egg Salad English Muffins

In a bowl combine the eggs, mayonnaise and mustard
- 3 hard-cooked eggs, chopped
- 1/4 cup mayonnaise
- 1/4 tsp. prepared mustard
- 2 English muffins, split and toasted
- 4 slices Canadian bacon or regular bacon
- 1/4 cup shredded cheddar

1. Boil 1-1/2 c. water. Add rice; cover, reduce heat & simmer 1 hour
- 1-1/2 c. water
