TOASTED ORZO WITH CHIVES

Toasting orzo gives it a nutty taste and a darker colour when cooked
- 2 cups (500 mL) orzo
- Salt and freshly ground pepper
- 1/2 cup (125 mL) chopped chives
- 2 tbsp (25 mL) extra virgin olive oil
- 1/2 tsp (2 mL) grated lemon rind
French Onion Soup

Cut onions, heat oil in a large skillet
- 4 large spanish onions
- 2 tsp olive oil
- 1 tbsp flour
- 1 clove garlic, minced
- 4 cups chicken stock (or 2 cups of beef & 2 cups of chicken)
