Falafel 2 & Tarator Bi Tahinin Sauce

- For the Flafel
- 1 cup dried chickpeas
- 1/2 cup fine bulgur
- 1/4 cup all purpose flour
- 2 tsp baking powder
- 2 tsp salt
- veg oil for deep frying
- 1 onion, coasley chopped
- 8 cloves garlic
- juice of one lemon
- 1/4 cup curly-leaf parsley
- 1/4 cup cilantro
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp cayenne
- Sauce
- Juice of one lemon
- 2 tbsp tahini sesame paste
- 1 clove garlic, chopped
- 1 tbsp dijon mustard
- 1 tsp toasted sesame oil
- 1 egg yolk
- 3/4 cup veg oil
- 3 tbsp water
- salt & pepper
Brown Sugar Shortbread

Preheat oven 350* Toast pecans 8-10 minutes
- 1 cup halved pecans
- 1 1\4 cup unsalted butter , softened
- 1\2 cup demerara sugar, plus extra for top
- 2 1\4 cup flour
- 1\2 tsp grated nutmeg
- 1\4 tsp salt
Honey and Poppy Seed Mandarine Dressing

Mix and serve over salad
- toasted pecans
- 1/3 cup oil
- 1/4 cup honey (or less)
- 3 tbsp white wine vinegar ( or less)
- 1 tbsp shallots, minced
- 1 clove garlic, minced
- 1/2 tsp each poppy seed and dijon mustard
Almond Chicken Soo Gai

Hold knife horizontally and slice each chicken breast into 3 pieces of thin fillet
- 4 cups chicken breasts frozen, starting to thaw
- 2 cups egg batter (see recipe)
- 1/2 cup crushed, roasted almonds
- 1 tsp each salt & pepper
- 1 cup oyster sauce (see recipe)
- sugar
- sesame oil
- OYSTER FLAVORED SAUCE;
- Dilute 3 tbsp of oyster sauce and 1 tbsp of chicken stock into 1 cup of cold water and bring to a boil.
- Thicken with 1 1/2 tsp cornstarch and water mixture.
- Add 1 tbsp and sesame oil.
- THIN EGG BATTER;
- Whip 1 egg white in a mixing bowl with 1 tbsp of oil for 2 minutes and 1 cup of cold water, 2 tbsp cornstarch and enough flour to make batter the thickness of pancake batter. Let stand 30 minutes to 1 hour.
Cured Flank Steak & (Green Peppercorn Sauce)

- 2 cups brown sugar
- 1 cup Kosher salt
- 3 tbsp ground mace
- 3 tbsp ground allspice
- 3 tbsp ground onion powder
- 3 tbsp garlic powder
- GREEN PEPPERCORN SAUCE;
- 1 \4 cup white wine vinegar
- 2 tbsp dijon mustard
- zest of one lemon
- juice of one lemon
- 2 cloves garlic, chopped
- 1 tbsp green peppercorns
- 1 cup olive oil
- 8 green onions, charred on grill , roughly chopped
Raw Kibbeh

- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp harissa or other hot pepper sauce
- 1 shallot, finely chopped
- Cilantro
- salt & pepper
Vinaigrette

- 1\3 olive oil
- 1 tbsp redwine vinegar
- 2-3 tbsp dijon mustard
- 1 tbsp honey or maple syrup
- 1 tsp salt (opt)
- black pepper or herbs
Crisp Fish in Chili Sauce

In saucepan, brown crushed garlic and chopped ginger
- 2 lbs fish fillets
- 2 cloves garlic
- 1 egg white
- 1 small gingerroot
- 6 green onions, cut into 1inch pieces
- 2/3 cup cornstarch mixture
- 1 1/2 cups water
- 1 tbsp veg oil
- 1/2 cup chili sauce
- 2 tbsp soya sauce
- 3/4 cup water
- 2 cups flour
- 1 tsp each salt & pepper
- 1/2 cup ketchup
- 3 tbsp sugar
- 1 tbso red wine
Banana Muffins

350* bake for 20 minutes
- 3 or 4 bananas mashed
- 1\2 cup white sugar
- 1 slightly beaten egg
- 1\3 cup melted butter
- 1 tsp baking soda
- 1 tsp baking pwd
- 1\2 tsp salt
- 1 1\2 cup flour
