Edamame "Hummus" with spiced Pita chips

This fresh green, creamy dip has all the classic hummus flavors of garlic, cumin and lemon
- 2 cups frozen shelled edamame, cooked according to pkg directions
- 1 cup silken tofu, drained
- 1/2 tsp salt, plus more to taste
- pinch of white pepper, plus more to taste
- 1 1/2 tsp ground cumin, plus more to garnish
- 3 cloves garlic, minced (about 1 tbsp)
- 1/4 cup olive oil
- 1/3 cup fresh lemon juice, plus more to taste
- Spiced Pita chips, (recipe follows)
Salad Dressing

Mix and refrigerate
- 1/3 cup Cold-Pressed Extra-Virgin Olive Oil
- 2 tbsp Apple Cider Vinegar (Organic)
- 2 tbsp Maple Syrup
- 1/2 tsp Orange Zest
- 1/2 tsp Dijon Mustard
- 1/2 tsp Thym
- Pinch Salt & Pepper
Fruit Dip

Combine, chill several hours , use with watermelon, banana, cantelope & apples
- 2 small pineapple yogurts
- 1 pkg large cream cheese
- 1 pkg instant pudding mix vanilla ( not mixed)
Cheese Fondue

Serve with 1 inch cubes of crusty french, whole wheat, or pumpernickel bread , baby carrots, celery and red pepper ...
- 1 cup dry white wine
- 6 oz Swiss or Jarlesberg cheese = 1 1/2 cups shredded
- 6 oz Gryere cheese, shredded
- 2 tbsp flour
- 1/8 tsp pepper
- pinch ground nutmeg (opt)
Pesto Vinaigrette for Brochette on BBQ

In food processor, process garlic and salt until paste like
- 3 large garlic cloves, quartered
- 1 tsp salt
- 2 cups fresh parsley, packed
- 1 cup fresh basil, packed
- 3 tbsp red wine vinegar
- 1 tsp sugar
- 2\3 cup olive oil
Curried Beef (Slow Cooker)

In a skillet over med heat, brown the beef on all sides
- 1 lb beef stew meat
- 1/4 tsp salt
- Pepper to taste
- 3 cloves garlic, minced
- 1 tsp fresh ginger, chopped
- 1 fresh jalapeno pepper diced
- 1 tbsp curry pwd
- 1 (14.5 oz) can diced tomatoes with juice
- 1 onion, sliced and quartered
- 1 cup low sodium beef broth
Fruit Skewers with Marscapone Cream

Peel pineapple, peel and seed cantelope
- 1/2 pineapple
- 1/2 cantalope
- 2 mangoes
- 24 strawberries, hulled
- 48 blueberries
- Marcapone cream;
- 2 cups marscapone cheese
- 1/4 cup whipping cream
- 2 tbsp liquid honey
Cajun Chicken Quesadilla

Preheat oven at 350F. Over medium-high heat, sauté chicken breast in olive oil
- 4 boneless, skinless chicken breasts
- 1 tsp olive oil
- 2 tbsp Cajun spice
- 2oz low fat cheese, shredded
- 4 whole wheat pitas, each pita divided in 2 circles
- 1 cup salsa
Spicy Chickpea Tacos

Heat oil in a large frying pan over med heat
- Toppings:
- 1 tbsp oil
- 1 small onion, diced
- 1 red pepper, chopped
- 2 large garlic cloves, minced
- 1 can chickpeas, rinsed and drained
- 1 lrg plum tomato, chopped
- 1 tbsp chili pwd
- 1 tsp ground cumin
- 1 tsp oregano leaves
- 1/2 tsp salt
- 1/2 tsp hot pepper sauce
- 1 cup frozen corn
- 8 to 10 taco shells, warmed
- shredded lettuce, green onion, diced avocado or guacamole, shredded cheddar cheese, sour cream and chopped coriander.
Peppered Anchovy Puff Pinwheel

On lightly floured surface, roll out pastry to 16x10 rectangle
- 1 pkg frozen puff pastry, 1/2 pkg is enough , thawed
- 2 tbsp butter, melted
- 2 tbsp anchovy paste
- 2 tbsp fresh parsley and chives, chopped
- 2 tbsp fresh basil or oregano
- 1/2 tsp pepper
