1. Preheat broiler. On a baking sheet, toss corn with 1 tbsp (15 mL) melted butter
- 2 cups (500 mL) corn kernels, thawed if frozen

Thai Basil Chicken Soup with Asparagus and Mushroom Filled Crepes and Thai Basil Butter on Toasted Baguette

Thai basil chicken broth; place chicken, mushrooms,celery ,carrot, onion, lemongrass,thai basil, ginger, thai chil...
- Thai Basil Chicken Broth;
- 1 whole chicken,about 2-3lbs
- 12 oz chiitake mushrooms, stems and caps separated, reserving caps for crepes
- 1 celery stalk,cut in half
- 1 med carrot, peeled and cut in half
- 1 med onion,skin removed and cut in half
- 1 lemongrass stalk, bruised
- 1 bunch fresh Thai basil, stems and leaves
- 1 tbsp. smashed fresh ginger
- 1 red thai chile split,seeded if no heat is desired
- Peel of 1 lime
- 2 bay leaves
- 1 tbsp. black peppercorns
- Thai Basil Soup garnishes;
- Thai Basil Chicken Broth,recipe above

- juice of 2 limes

Cream of Brie Soup

In a large saucepan over low heat, cook the shallots in the butter for about 10 minutes

- 3 shallots, chopped
- 2 tbsp butter
- 2 tbsp flour
- 1/2 cup white wine
- 2 cups milk
- 1 cup chicken broth
- 3/4 lb brie, trimmed of rind and cut into cubes
- salt & Pepper
- Mushroom Duxelles
- 8 oz white mushrooms, sliced and cut into sticks
- 1 shallot, finely chopped
- 2 tbsp olive oil
- 1/2 cup white wine
- 2 tbsp chopped chives
- pinch of salt and pepper
Homemade Wonton Soup

Dice green onions and set aside all but 1 tbsp
- 1 bunch of green onions, cut into 1/2 inch pieces, divided
- 6 fresh mushrooms sliced
- 1 lb ground pork
- 1 tbsp. sesame oil
- 1 tbsp soy sauce
- 1 egg
- 1/4 cup dry bread crumbs
- 1/4 tsp salt
- 1/2 tsp ground black pepper
- 1 (16oz) pkg wonton wrappers
- 8 cups chicken stock
- 16 uncooked med shrimp, peeled and deveined
- 16 snow peas
- 1 dash soy sauce, or to taste
- 1 dash sesame oil, to taste
Shrimp Risotto with Thai Flavours

- 3 tbsp dark sesame oil
- 1 large onion, chopped
- 2 cups Arborio rice
- 2 cans coconut milk
- 2 cups water
- 1/4 cup fish sauce
- finely grated peel and juice of 1 lime
- 1 tsp salt
- 1 tsp dried chili flakes
- 14 oz fresh or frozen shelled shrimp
- 1 cup frozen green peas
- 1 1/2 cups chopped fresh coriander or shredded basil, preferably Thai basil
- 1 1/2 cups water
Wonton Soup

I made the wontons with cooked filling and froze them for quick soups
- 1 bunch of green onions, cut into 1/2 inch pieces
- 6 fresh mushrooms,sliced
- 1 pound ground pork
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1 egg
- 1/4 cup dry black pepper
- 1 (16 oz) pkg of wonton wrappers
- 8 cups chicken stock
- 16 uncooked med shrimp,peeled and deveined
- 16 snow peas
- 1 med head Bok Choy sliced thin
- 1 dash soy sauce or to taste
- 1 dash sesame owl, to taste
- Green onions sliced thin
- (I use the baby book choy and also add mushrooms,baby corn,bamboo shoots, water chestnuts too)
Crab Cakes

Crab cakes: Prepare Chipotle mayonnaise Place crabmeat in sieve; pick through to remove any cartilage
- Crab Cakes;
- 1 frozen crab meat , thawed
- 1/3 cup finely diced sweet red pepper
- 1/4 cup finely diced sweet green pepper
- 1/4 cup chopped green onions
- 1 egg, beaten
- 1 1/4 cup dry breadcrumbs
- 2 tbsp veg oil
- Chipotle Mayonnaise;
- 2 chipotle pepper
- 1/2 cup light mayonnaise
- 1 tbsp adobo sauce
- 1 dash Worcestershire sauce
Easy Oven Beef & Vegetable Stew

* Remove all visible fat from beef; cut beef into 1 inch cubes
- 1/2 lb. stewing beef,
- 1/4 cup whole wheat flour,
- 6 small onions; sliced,
- 3 cups broccoli,
- 2 medium carrots;
- peeled and cut into chunks,
- 3 cloves minced garlic,
- 1 cup diced parsnip,
- 3 cups water,
- 1-1/4 cups low sodium beef broth,
- 1 large can tomatoes,
- 1 tsp. dried thyme
- , 1 tsp. dried oregano,
- Salt and pepper to taste,
- 1 bay leaf.
