- 1 cup sour cream
- 1 tbsp onion flakes
- 2 cups Hellman's Mayo
- 8 oz Mozzarella cheese shredded
- 1 tsp sugar
- 2 tbsp Parmesan cheese grated
- 2 tbsp parsley
- garlic salt to taste
Sweet & Sour Bo Bo Balls

EGG BATTER; whip egg, oil and vinegar until it appears thickened
- EGG BATTER:
- Make 12-24 hrs before
- 1 small egg
- 1 tbsp veg oil
- 1 tbsp vinegar
- 1/4 cup water
- 2 tbsp cornstarch
- 1 cup flour
- 1 tsp salt
- 1/2 tsp baking pwd
- 1/4 tsp baking soda
- BOBO BALLS;
- 1 lb ground pork
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp sesame oil
- 1 cup flour
- oil for frying
- SWEET & SOUR SAUCE;
- 1/2 cup water
- 1 cup vinegar
- 2 cups sugar( add more if difficutly with sauce)
- 1 cup ketchup
- 1/2 salt
- 2 1/2 tbsp cornstarch
- 2 tbsp water
Pesto Vinaigrette for Brochette on BBQ

In food processor, process garlic and salt until paste like
- 3 lrg garlic cloves, quartered
- 1 tsp salt
- 2 cups fresh parsley, packed
- 1 cup fresh basil ,packed
- 3 tbsp red wine vinegar
- 1 tsp sugar
- 2/3 cup olive oil
Broccoli & Scallops

- 1 lb de pétoncles moyennes
- 2 tasses de champignons tranchés
- 2 c. à thé d’huile d’olive
- 3 tasses de brocoli coupé
- 1 poivron rouge haché
- 1 tasse de bouillon de poulet faible en sodium
- 3 c. à table de farine de blé entier
- 2 c. à thé de sauce soya faible en sodium
- Poivre au goût
Spicy Tuna-Cucumber Salad with Thai Peanut Dressing

- 2 1\4 tsp reduced fat peanut butter
- 2 1\4 low sodium soy sauce
- 1\4 tsp sesame oil
- 1 can chunk white tuna in water, spicy Thai chili light flaked
- 1 cup cucumber, diced
- 1 med scallion chopped
- 2 tbsp cilantro, fresh chopped
- 2 cups romaine lettuce chopped

Fried Calamari

- 1 lb fresh calamari, cleaned
- 2 cups of milk
- juice of one lemon
- 1 tsp garlic tabasco sauce
- 1 tsp sweet paprika
- 1 tsp cayenne pepper

- 1 tsp pepper
- 1 lemon, cut into wedges
- salt and pepper

Rainbow Chicken Salad

- 2 cups Catelli Bistro Rainbows
- 2 cups cooked chicken breasts (about 4) cubed
- 1 small red onion, finely chopped
- 3 green onions . sliced
- 1/3 cup pimento, chopped
- 2 cloves garlic, minced
- 2 tsp dijon mustard
- 1/2 tsp salt
- 2 tbsp red wine vinegar
- 1/2 cup olive oil
- 1/3 cup parmesan cheese, grated
One Pan Parmesan Chicken & Veges

* Preheat oven to 350. In a deep dish baking pan, place chicken breasts and cut up vegetables
- 4 chicken breasts,
- 2 cups broccoli,
- 2 cups cauliflower,
- 1 large zucchini,
- 1 red bell pepper,
- 1 green pepper,
- 1 red onion,
- 1 small bunch asparagus,
- 2tbsp olive oil,
- 4 tbsp low fat parmesan cheese,
- Pinch of garlic powder, rosemary and pepper,
- 1/4 -1/2 cup low sodium chicken broth.
Mushroom Sauce

In a med saucepan, melt margarine over med heat
- 1 tbsp lite margarine
- 1 1/2 tbsp flour
- 1/4 tsp lite salt
- 1/8 tsp white pepper
- 1 cup skim milk
- 1/2 cup cooked mushrooms, sliced
