Salmon with Green Bean Salad with Dill

Rub the salmon all over with the olive oil and sprinkle with salt and pepper
- 1 tsp olive oil
- Salt & pepper to taste
- 1 salmon fillet
- 2 cups steamed green beans
- 2 scallions, chopped, including some of the firm green
- 1 tsp chopped fresh dill
- 2 tsp fresh lemon juice
- 2 tsp extra virgin oil
- 1 tsp chopped parsley

- INGREDIENTS
- 3 3 1-inch large eggplants, cut into 1-inch (2.5 cm) rounds
- salt
- 2 2 2 cups (480 ml) olive oil, for frying
- 2 2 1-inch large yellow potatoes, peeled and sliced into 1-inch (2.5 cm) rounds
- 1 1/4 1 1/4 1/4 cups (300 ml) grated kefalotyri or Parmesan cheese
- Meat Sauce
- 1 1 1 tbsp (15 ml) olive oil
- 1 1 1 large onion, grated
- 1 1/2 1 1/2 1/2 lbs (680 g) ground beef
- 2 2 2 cloves garlic, minced
- 2 2 2 cups (480 ml) pureed canned tomatoes
- 1/3 1/3 1/3 cup (80 ml) red wine
- 1/4 1/4 1/4 tsp (1 ml) ground cinnamon
- 1/8 1/8 1/8 tsp (0.5 ml) ground clove
- 1/4 1/4 1/4 tsp (1 ml) ground allspice
- 1/8 1/8 1/8 tsp (0.5 ml) oregano
- 1 1 1 bay leaf
- 2 2 2 tbsp (30 ml) chopped fresh parsley
- salt and freshly ground pepper
- Béchamel Sauce
- 4 4 4 cups (960 ml) milk
- 1/4 1/4 1/4 tsp (1 ml) grated nutmeg
- 5 5 5 tbsp (75 ml) butter
- 3/4 3/4 3/4 cup (180 ml) all-purpose flour
- salt
- 3 3 3 eggs
Crab Cakes (the Inn Chef)

When done, dip in flour, then egg , water then potato flakes
- 1 lbs steamed potatoes, cooked and mashed
- lemon zest & the juice of 1\2
- olive oil
- grain mustard
- capers 2 oz
- minced red onions 2 oz
- cucumbers , julienned = 1 cup
- salt & Pepper
- Mix the above ingredients together
- Mix 1 egg, add potatoes , crab meat 1 cup and 1\2 cup of sliced chives,
- salt and pepper
Beet Salad with Walnuts and Goat Cheese

Put the beets in a saucepan with water to cover and season generously with salt
- 2 bunches of med beets ( about 1 1/2 lbs) tops trimmed
- Kosher salt and pepper
- 2 tbsp red wine vinegar
- 1/3 cup olive oil
- 1/2 cup walnuts
- 1 bunch arugula, trimmed and torn
- 1/2 med head escarole, torn
- 4 oz goat cheese, crumbled
Bruchetta

In mixing bowl, combine olive oil, tomatoes, garlic, salt to taste and basil
- 1 whole-wheat pita
- ½ tsp olive oil
- 1 tomato, cut into small pieces
- 1 clove minced garlic
- Kosher salt to taste
- Basil (leaves or fresh)
- 1oz feta cheese
Brandy Nut Baked Brie

Mix ingredients, and skore cross hatch cuts on top
- 1/4 cup pecans
- 1/4 cup brown sugar
- 1 tbsp Brandy
- 1 Small Brie
Seafood Ceviche

cut fish into bite size chunks
- 1 lb firm fresh white fish fillets
- 1/2 lb small raw shrimp
- 1/2 lb small scallops
- 1 sweet purple onion, sliced into thin rings
- 2 green onions, including green parts, chopped
- 1 lrg ripe tomato, diced
- 1 Anaheim or poblano chile, roasted
- 1 Jalapeno chile, seeded and sliced into very thin rings
- 1/4 cup chopped cilantro
- 3 tbsp. olive oil
- 1 tbsp. sugar
- juice of 4 to 6 limes
- salt and pepper to taste
- crip lettuce
- avocado slices for garnish
- tomato slices for garnish

* Preheat oven to 350F. Put the Ryvita crackers crumbs in a small bowl and cover with the milk
- 2 Ryvita crackers, crushed
- 1/4 cup skim milk
- 3 lbs. extra lean ground beef
- 1 large green pepper minced,
- 1/2 cup chopped onion
- 6 large cloves minced garlic
- 1 tsp. dried thyme
- 2 large eggs (1 yolk only), lightly beaten
- 1 tsp. Worcestershire sauce
- 1 tsp. paprika
- 1 tsp. salt
- 1 tsp. black pepper
- 2 tbsp. strained salsa
