Chicken & Wild Rice Soup

Saute celery, carrots and mushrooms in a small amount of olive oil
- 1 whole roasted chicken deboned and cut up (HT)
- 1 package long grian $ wild Rice
- 6 stalks of clelery cleaned and diced
- 1 caroot grated
- 12 mushrooms diced or sliced
- 6 cups chcken broth
- 1 can cream of mushroom soup (can use cream of chicken)
Gluten free Elbows with Mixed Mushrooms and Italian Sausage Soup

- 1 box barilla gluten free elbows
- 3 quarts chicken stock (gluten free)
- 3 cloves garlic, minced
- 4 Tbsp extra virgin olive oil
- 1 sprig rosemary
- 4 (6 0z ) pkgs mixed mushrooms
- 1 lb italian sausage, boiled for 10 mins and cut into 1/3 inch slices (gluten free from Whole foods)
- 1 15 oz can cannelloni beans, drained
- 1 pint cherry tomatoes, halved
- salt and black pepper to taste
- 1 tbsp parsley, chopped
Grilled Lemon Parsley Veal Chops

- 1/3 cup chopped fresh Italian parsley
- 3 garlic cloves, crushed
- 1 Tbsp minced fresh rosemary

- 1/2 cup extra virgin olive oil
- 1 1/2 lbs Nanila clams scrubbed clean
- 1/2 cup parsley
- 1/2 cup dry white wine
- 2 Tablespooons unsalted butter diced into small cubes
- Sea Salt

- 2 shallots chopped
- 1 lemon zested
- 5 cloves garlic chopped fine

Haricots Verts Salad with Pecans and Blue Cheese

Bring a 4 qt. pot of salted water to a boil
- kosher salt
- 1/2 lb trimmed haricots verts, cut into 1/2 inch pieces
- 1 TBSP Champagne vinegar
- 1/4 tsp Dijon Mustard
- freshly ground black pepper
- 2 TBSP extra virgin olive oil
- 1/2 cup pecans, toasted and coarsely chopped cup dried cranberries
- 1 1/4 oz (1/4 cup) crumbled blue cheese, preferably Danish
- 6 large Bibb lettuce leaves
Warm Spinach and Pine Nut Salad

- 6 cups fresh spinach leaves
- 2 ups fresh basil leaves
- 1/2 cup olive oil
- 3 cloves of garlic, minced
- 1/2 cup pine nuts
- 4 oz. prosciutto, dices
- 3/4 cup freshly grated Parmesan Cheese
