- 6 spears of asparagus, chopped
- salt and freshly ground black pepper
- 12 large eggs
- 1/2 grated monterey Jack
- 1/4 cup Parmesan
- 2 dashes hot sauce
- 2 Tbsp butter
- 1 med onion, halved and sliced thin
- 1 cold baked potato, diced
- 1/4 cup chopped green olives with pimentos

Sauteed Okra with Tomato and Corn

- 1 small onion
- 1 ear corn
- 1 1/2 TBSP vegetable oil
- 1/2 cup water
- 1/2 tsp Worcestershire sauce
Caesar Salad (classic)

DRESSING: Chop together anchovy filets, garlic, and pinch of salt
- The Croutons:
- The Dressing
- 6 anchovy filets packed in oil, drained
- 1 small garlic clove
- kosher salt
- 2 large egg yoks
- 2 TBSP fresh lemon juice, plus more
- 3/4 tsp Dijon mustard
- 2 TBSp olive oil
- 1;2 cup vegetable oil
- 3 Tbsp finely grated Parmesan
- Freshly ground black pepper
- 3 cups torn 1" pieces of country bread, with crusts
- 3 Tbsp olive oil
- The Lettuce
- 3 romaine hearts, leaves separated
- The Cheese
- Parmesan for serving
Tiramisu

In a med saucepan, whisk together egg yolks and sugar until well blended
- 6 egg yolks
- 3/4 cup white sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 tsp vanilla extract
- 1 lb mascarpone cheese
- 1/4 cup strong brewed coffee, room temperature
- 2 TBSP rum
- 2 (3 oz) packages ladyfinger cookies
- 1 TBSP unsweetened cocoa powder
Simple Bolognese

In a large skillet, heat the olive oil
- 1/4 cup olive oil
- 1 med onion, coarsely chopped
- 2 garlic cloves, peeled and coarsely chopped
- 1 celery stalk, coarsely chopped
- 1 carrot coarsely chopped
- 1 pound ground chuck beef
- 1 28-oz can crushed tomatoes
- 1/4 cup flat leaf parsley chopped
- 8 fresh basil leaves, chopped
- salt and freshly ground black pepper
- 1/4 cup freshly grated Pecorino Romano
Warm Spinach Basil Salad

Wash, rinse, and drain 6 cups of spinach and 2 cups of fresh basil leaves
- 6 cups spinach
- 2 cups fresh basil
- 1/2 cup olive oil
- 3 cloves minced garlic
- 1/2 cup pine nuts
- 3/4 cup diced prosciutto or ham
- 3/4 cp shredded Parmesan cheese

Mix 1/2 cup ketchup. 1/4 cup apricot jam, 2 Tbsp honey, 1 1/2 Tbsp soy sauce and o tablespoon rice vinegar

- 8 pieces thick sliced bacon, chopped
- 3 TBSP red wine vinegar
- 1 tsp sugar
- 1/2 tsp dijon mustard
- kosher salt and freshly ground black pepper
- 4 large white mushrooms, sliced
- 3 oz red onion, very thinly sliced
