Grilled Lemon Parsley Veal Chops

For veal: Whisk first 5 ingredients in a small bowl to blend
- Veal:
- 1/2 cup olive oil
- 6 Tbsp fresh lemon juice
- 1/3 cup chopped fresh italian parsley
- 3 garlic cloves crushed
- 1 Tbsp minced fresh rosemary
- 6 8-10 0z loin or rib veal chops each about 1 inch thick
- Topping:
- 3 Tbsp chopped fresh Italian parsley
- 1 Tbsp grated lemon peel
- 1 1/2 tsp minced fresh rosemary
- 1 tsp minced garlic
Mother's Marianted Shrimp

Cover shrimp with boiling water to which othere ingredients have been added
- lbs fresh shrimp Marinade:
- 1/2 cup mixed pickling spices 3 cups chopped green onions
- 2 tbsp salt celery tops. 2 1/2 cups salad oil
- 1 cup white vinegar
- Juice of 2 lemons
- 5 teaspoons celery seed
- 3 teaspoons salt
- Dash of tabasco
Olive oil roasted chicken with carmelized carrots

Preheat oven to 350 degrees
- 2 lbs whole chicken legs, or bone in, skin on, drumsticks or thighs
- Kosher salt and freshly ground black pepper
- 1 bunch small thin carrots preferably with their green tops
- 2 heads garlic, left unpeeled and halved crosswise to expose the cloves
- 1 lemon thinly sliced, seeds removed
- 1/2 bunch oregano, plus more leaves for garnish
- 1 cup olive oil

In a small saucepan over medium low heat, combine the tuna with the extra virgin olive oil, garlic, bay leaf, rosem...
- 1/2 fresh ahi or albacore tuna, cut into 1 inch chunks
- 3 cups extra virgin olive oil
- 3 garlic cloves
- 1 bay leaf
- 1 fresh rosemary sprig
- 1 fresh thyme sprig
- salt and freshly ground pepper, to taste
- 1/2 lb haricots verts or green beans, trimmed, blanched, and cooled in ice water
- 1 red bell pepper, seeded, deribbed and julienned
- 1/2 cup nicoise olives, pitted
- 1/2 pint cherry tomatoes, halved
- 2 med potatoes, boiled and quartered
- 1/2 red ionion, thinkly sliced
- 2 buncvhes arugula, picked over
- 1/2 cup oilive oil
- 1/4 cup balsamic vinegar
- 10 anchovy filets
- 4 hard cooked eggs, halved or aurtered
Vinaigrette Dressing with Baby greens and Avocado

Whisk together mustard, lemon juice, olive oil, salt and pepper to make a vinaigrette
- Dressing:
- 1 1/2 Tbsp Dijon mustard
- 1 Tbsp lemon juice, freshly squeezed
- 4 Tbsp olive oil
- 3/4 tsp kosher salt
- 1/4 tsp ground paper, freshly ground
- Salad
- 1 (8 ounce)bag mixed baby greens
- 2 avocados, ripe and sliced into wedges
- parmesan cheese, shavings if desired (to garnish)
