Preheat oven to 350. Add 1 Tbsp of oil with the chopped onion and garlic to a pan
- 2 2 2 Tbsp olive oil
- 1 1 1 small onion, peeled and diced
- 1 1 1 clove garlic, peeled and minced
- 1 1 1 can corn kernels, drained (15 oz)
- 1/2 1/2 1/2 cup milk
- 1 1 1 egg
- 2 2 2 Tbsp chopped scallions or chives
- 1/4 1/4 1/4 cup Parmesan cheese
- 1/2 1/2 1/2 cup cornmeal
- 1/2 1/2 1/2 cup all purpose flour (or white whole wheat flour)
- to and pepper to taste
Orzo, Pine nut and Feta Salad

- 1 lb. orzo
- 3 tbsp fresh lemon juice
- 1/2 cup olive oil
- salt and Freshly ground pepper, to taste
- 1/2 cup pine nuts, toasted*
- 1 1/4 cups feta cheese, crumbled (6 oz)
- 1 cup thinly sliced scallions (green part only)
- Toast pine nuts in a shallow baking pan in a 350 oven until golden , about 5-10 mins.
Mashed Potatoes, Make Ahead

- 2/3-1 cup heavy cream
- 2/3-1 cup whole milk
- 1 1/4 cups (2 1/2 sticks) unsalted butter cut into pieces
- 1/2 cup sour cream
- Freshly ground pepper

- Veal:
- 1/2 cup olive oil
- 6 Tbsp fresh lemon juice
- 1/3 cup chopped fresh italian parsley
- 3 garlic cloves crushed
- 1 Tbsp minced fresh rosemary
- 6 8-10 0z loin or rib veal chops each about 1 inch thick
- Topping:
- 3 Tbsp chopped fresh Italian parsley
- 1 Tbsp grated lemon peel
- 1 1/2 tsp minced fresh rosemary
- 1 tsp minced garlic

- 1 cup SIFTED flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup milk
- 2 tablespoons real butter
- 3 eggs
- 1 cup sugar
- 1 teaspoon vanill
- 2 pints strawberries
- 1 cup heavy cream for whipping

- 4 (1-inch thick) crusty bread slices (such as Batard or pain au levain)
- 3 Tbsp plus 1 tsp extra virgin olive oil, divided
- 1 1/2 cups ricotta cheese
- 1 tsp flaky sea salt, divided
- 1/2 tsp black pepper, divided
- 1 garlic clove
- 2 to 3 (about 2 lb. total) heirloom tomatoes, cored and cut into 14 inch slices
- 1 cup loosely packed mixed fresh leafy herbs (such as basil, parsley, chervil, tarragon, anise hyssop or sliced chives)
