SCALLOPED BROCCOLI CASSEROLE

- 1 10-oz. pkg. frozen chopped broccoli
- 1/4 c. finely chopped onion
- 2 Tbs. butter
- 1 16 oz. can cream-style corn
- 1 beaten egg
- 1/2 c. coarse saltine cracker crumbs (12 crackers)
- 1/2 tsp. salt
CHOP SUEY CASSEROLE

Jill Collins, one of Janet's roommates at Capital University, passed this recipe on to Janet
- 1 lb. hamburger
- 1 can chop suey vegetables, drained
- 1 can cream of chicken soup, undiluted
- 1 can cream of mushroom soup, undiluted
- 1/2 c. water (use some of water drained from vegetables)
- 2 Tbs. soy sauce
- 1/2 c. uncooked Minute Rice
- Chow mein noodles
COCONUT-PECAN ICING

In a saucepan, combine slightly beaten egg, evaporated milk, sugar, butter and salt
- 1 egg
- 1 6-oz. can evaporated milk
- 2/3 c. sugar
- 4 Tbs. butter
- Dash of salt
- 1 1/3 c. coconut
- 1/2 c. chopped pecans
- 1 tsp. vanilla
SUGAR COOKIES

Drop by rounded teaspoonfuls on lightly greased baking sheet
- Blend together: 1 c. shortening
- 1 tsp. salt
- 2 tsp. lemon extract or grated lemon rind
- 2 c. sugar
- Beat in: 2 eggs, unbeaten
- 4 Tbs. milk
- Stir in: 4 c. sifted flour
- 2 tsp. baking powder
- 1 tsp. soda
FRESH LEMONADE SYRUP BASE

Dissolve the sugar in the boiling water
- 1 1/2 c. sugar
- 1/2 c. boiling water
- 1 Tbs. freshly grated lemon peel
- 1 1/2 c. freshly squeezed lemon juice
CHAMBORD MARGARITA

- Garnish:
- 2 c. warm water
- 1/2 c. sugar
- 1/3 c. fresh lime juice
- 1/3 c. fresh lemon juice
- 5 oz. Montezuma gold tequila
- 2 1/2 oz. triple sec liqueur
- 1/1/2 oz. Chambord liqueur
- 3 lime wedges
STRAWBERRY SLUSH

Blend all except 7-up and then pour into container and freeze
- 6 oz. frozen limeade concentrate
- 6 oz. frozen lemonade concentrate
- 2 c. grapefruit soda
- 1 1/2 c. white rum
- 2 small boxes frozen strawberries
- 1 qt. 7-up
CHOCOLATE COATING FOR TRUFFLES

Melt chocolate as directed above
- 1 bar (4 oz.) bittersweet chocolate (or 3/4 c. chips)
- 2 tsp. peanut oil
MICROWAVE CHEESECAKE

- Crumb Pie Crust:
- 1 c. crushed crumbs (graham cracker, vanilla wafers, cornflakes, etc.)
- 2-3 Tbs. sugar
- 1/4 c. margarine
- Filling:
- 1 (8-oz.) pkg. cream cheese
- 1/3 c. sugar
- 1/2 tsp. lemon or almond extract
- 1 egg
- 1 c. sour cream
- 3 Tbs. sugar
- 1/2 tsp. almond extract
- 1 (21-oz.) can fruit pie filling
