Pumpkin French Toast Bake

- 12 eggs
- 1 can (30 ounces) pumpkin pie mix
- 1 can (12 ounces) evaporated milk
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 15 slices white bread, cubed
- confectioners' sugar
- maple syrup
PUMPKIN MUFFINS

- 1 cup pumpkin
- 2 eggs, slightly beaten
- 1/2 cup water
- 1/2 cup vegetable oil
- 1 3/4 cups flour
- 1/4 tsp. salt
- 1 1/2 cups sugar
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1/4 tsp. cloves
KAHLUA SUBSTITUTE

Combine corn syrup, sugar, and instant coffee with hot water in a medium pitcher or large jar
- 1 c. light corn syrup
- 1/2 c. sugar
- 5 tsp. instant coffee
- 1/2 c. hot water
- 1 1/3 c. vodka
- 1 1/2 tsp. vanilla extract
SNEAKY PETES

- 12 oz. can frozen lemonade
- 12 oz. can frozen orange juice
- 2 c. cranberry juice
- 1 1/4 c. powdered sugar
- 1 2-liter bottle 7-up
- 1 2-liter bottle Wink
- A fifth of rum, vodka or gin
Chicken Tamale Casserole

Preheat oven to 400 degrees F
- 1 box Jiffy Corn Bread Mix
- 1 can Cream Style corn
- 1 small can diced green chilies
- 1/3 cup milk
- 1 egg
- 1 tsp. cumin
- 2 cups shredded Mexican Cheese Blend
- 1 Rotisserie chicken, deboned, shredded
- 1 (10 oz) can red enchilada sauce
- Diced green onions for garnish, if desired.
MICROWAVE PECAN TOFFEE

- 1 stick margarine
- 2 c. peanut butter
- 2 c. rice krispies

- 6 oz. chocolate bits
