- 2 lbs. boneless beef chuck or other pot roast
- 1 jalapeno chili, seeded and finely chopped
- 1 garlic clove, crushed
- 1 tsp. beef bouillon granules or 1 beef bouillon cube
- 1 onion, chopped
- 1/2 tsp. chili powder
- 1/2 tsp. ground cumin
- 2 Tbs. chopped fresh cilantro
- 1/2 tsp. salt
- 1 (16-oz.) can refried beans, heated
- 6 to 8 (12-inch) flour tortillas, warmed

- 4 oz. pkg. coconut cream instant pudding mix
- 1/3 c. dark rum (80 proof)
- 9 oz. container Cool Whip, thawed

Artichoke Veggie Pizza

Three kinds of cheeses combined with artichokes, spinach, and mushrooms on a purchased pizza crust
- 1 cup ricotta cheese
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced green onions
- 1/4 teaspoon minced garlic
- 1/4 teaspoon black pepper
- 1/4 teaspoon oregano
- 1 package (10 ounces) frozen chopped spinach, thawed and well drained
- 1 (16 ounce) pre-baked pizza crust
- 1 can (8 ounces) artichoke hearts, drained and chopped
- 1 cup sliced fresh mushrooms
- 1-1/2 cups shredded mozzarella cheese
CHOCOLATE CHEESECAKE

Place caramels and evaporated milk in heavy saucepan
- Filling:
- 6 Tbs. melted margarine
- 2 c. vanilla wafer crumbs
- Combine & line springform pan. Bake at 350° for 5 minutes.
