FARMER'S OMELET CASSEROLE

- 3 c. refrigerated hash brown potatoes
- 1 c. chopped green pepper, divided
- 1/3 c. chopped onion
- 1 Tbs. oil
- 18 eggs, beaten
- 2 1/3 c. chopped, cooked ham
- 1 1/4 c. chopped tomato, divided
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 1/2 c. shredded Cheddar or CoJack cheese
ASPARAGUS CASSEROLE

- 1 can cream of mushroom soup
- 3 hard boiled eggs, sliced
- 1/2 stick butter or margarine
- 1 c. shredded cheese
- 1 pkg. saltines, finely rolled.
AUNT MILLIE'S POTATO SOUP

Aunt Millie (Hartzell) of the Arizona Hartzells has furnished us lots of recipes over the years
- 1/2 lb. bacon, chopped
- 5-6 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- Salt and pepper to taste
- 3 Tbs. flour mixed with 1/2 c. cold water
- 1 can (14 1/2 oz.) evaporated milk
- Grated cheese
SOURDOUGH FRENCH BREAD
