Sausage stuffed Portobello Mushrooms

Preheat the oven to 400 degrees F
- 6 portobello mushrooms, stemmed (reserve 1 cup minced stems)
- 3 tablespoons plus 2 teaspoons extra-virgin olive oil, plus more for drizzling
- 12 ounces hot Italian sausage
- 12 ounces sweet Italian sausage
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 1/4 cup finely chopped celery
- 2 teaspoons minced garlic
- 1/2 cup plain bread crumbs
- 1/2 cup freshly grated Parmesan
- 1/4 cup plus 1 tablespoon minced fresh parsley leaves
- 2 teaspoons Essence, recipe follows
- 1 egg, lightly beaten
- Balsamic vinegar, for drizzling
Cheesy Stuffed Meatloaf

This meatloaf is cooked on a cookie sheet which gives it a nicer crust than the breadpan version
- 2 1/2 lbs Sweet Italian Sausage
- 1 1/2 lb Lean Ground Beef
- 1/4 c Ketchup
- 1/2 c Seasoned Bread Crumbs (Italian flavor Progresso)
- 2 T Chopped Dried Onion
- 1 T Onion Powder
- 1 T Garlic Powder
- 1 t Salt
- Pepper (fresh ground)
- 1/2 c Parmesan (good quality)
- 1 1/2 c Grated Cheddar Cheese (medium to sharp)
Zuccini Bread

Grate orange peel and lemon peel, set aside, grate zucchini, drain well and save
- 2 Small Zuccini
- 1 c walnuts(optional)
- 3 c all purpose flour
- 1 T cinnamon
- 1 t baking soda
- 1 t salt
- 3 eggs
- 1 1/2 c sugar
- 1 c oil
- 1 strip orange peel l" wide
- l strip lemon peel
- l T vanilla
Pomegranate Mojito

This Pomegranate Mojito was a hit at the bunco party last night!
- 1 cup white rum
- 1 cup Pama Pomegranate Liquor
- 2 cups pure pomegranate juice (Pom works great)
- 1 cup freshly squeezed lime juice
- 8 large sprigs of fresh mint
- 1 cup simple syrup (Dissolve 1 cup sugar in boiling water just enough to dissolve)
- Ice cubes
- Sparkling water or club soda
Brined and Smoked Pork Ribs

These ribs are moist, tender and flavorful
- 10 Ribs (in 4 catering trays)
- Stir together until dissolved
- 4 C Hot Water
- 2 C Salt
- 4 C Brown Sugar (packed)
- 2 1/4 c white sugar
- 1/2 c Molasses
- 2 T Pepper
- 6 T Grill Seasoning (BBQ 3000 from penzey spice)
- Stir in 1 Gallon Apple Juice
- Add 6 cups ICE to cool
Holiday Brie en Croute

1. Thaw pastry sheet at room temperature 30 min
- 1 sheet (1/2 pkg) Peperidge Farms frozen Puff Pastry sheets.
- 1 egg + 1 T water
- ½ cup apricot jam or seedless raspberry jam (we use Smuckers apricot simply fruit).
- 1/3 cup dried cranberries, softened (1 min in hot water)
- ¼ cup toasted almond slices
- Crackers
Beef Wellington (Individual)

This recipe takes some time but is worth the effort
- Madeira Sauce
- 2 T Butter
- 1/2 c Cube Ham
- 1/2 c Chopped onion
- 1/4 c Celery
- 1/4 c Carrot
- 1 Large Tomato
- 2 T Flour
- 2 C Beef Stock
- 1 Bay Leaf
- 1 sprig parsley
- 1 pinch thyme
- 1/4 c Madeira (or sherry)
- 1 c sliced mushrooms
- 1 T Butter
- Duxelle
- 1 lb Mushrooms
- 1/4 c butter
- 1/2 C Chopped Green Onion
- 1/2 c cooked Ham
- 2 T Chopped Parsley
- 1 T Madeira
- Wellington
- Puff Pastry (Pepperidge Farm works well in freezer section)
- 8 Filet Medallions (or number needed for party)
- Pate (high quality)
- 1 Egg and water for egg wash
Ollalieberry Pie or Nectarine Ollieberry pie

Mix together and let stand while you make your favorite crust (see pate brise)
- 7 cups fresh or frozen berries
- 3/4 c sugar (tart) or 1 1/2 c sugar (sweet)
- 1/3 c instant tapioca
- 1/4 t salt
Fantasy Fudge

Combine sugar, margarine and milk in a heavy 2-3 qt saucepan, bring to full boil
- ¾ c butter (better) or Margarine
- 3 c sugar
- 1-5 fl oz can evaporated milk
- 12 oz semi sweet chocolate chips
- 1 7 oz jar Marshmallow crème
- 1 t vanilla
- 1 c chopped nuts (optional)
Persimmon Cookies

These cookies are sooooo yummy and a great way to use overripe persimmons of any kind
- 1 c nuts (optional)
- 1 c raisins (optional)
- 2 c flour
- 1 t baking soda
- 1/2 t cloves
- 1/2 t cinnamon
- 1/2 t nutmeg
- 1/2 t salt
- 1 c sugar
- 1/2 c shortening
- 1 egg
- 1 c persimmon pulp
