Pomegranate Mojito

- 1 c sugar
- 1 c hot water
- Several sprigs Mint
- 2 oz Pama Liquor
- 2 oz Bacardi Rum
- 4 oz Pomegranate Juice
- Juice of 1 lime
- Sparkling Water
Pea Soup (Andersen's)

This recipe is adapted from Andersen's split pea soup
- 2 qts water
- 2 c green split peas
- 1 stalk celery
- 1 large carrot
- 1 med onion
- 1/4 t ground thyme
- 1 pinch cayenne
- 1 bayleaf
- salt
- pepper
- 1 honey ham bone

Onion Dill Bread (Pop's)

This has been set-up so it works well in a bread machine and is quite yummy when warm
- 1 pkg yeast
- 3 1/3 c flour
- 1/4 t baking soda
- 1 1/2 t salt
- 1 egg
- 1/4 c warm water
- 3/4 c Cottage Cheese
- 3/4 c Sour Cream
- 3 T Sugar
- 3 T Minced Onion (dried)
- 2 T whole dillseed
- 1 1/2 T Butter
Artichoke Jalapeno Dip

In a food processor, pulse artichoke hearts until chopped
- 1 can (14oz) artichoke hearts, drained
- 2 jalapenos, seeded
- 1/2 cup parmesan cheese, grated
- 6 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/2 tsp garlic salt
Chicken Artichoke Pasta

This recipe was adapted from a Giada de Laurentis recipe, I added chicken & roasted garlic
- 3 T Olive Oil
- 1 medium onion finely chopped
- 1 lb mushrooms (mixed white/ mini portabella)
- 6 cloves roasted garlic chopped (available in antipasto bar)
- 4 chicken thighs, skin removed and meat cubed
- salt/pepper
- 1 cup Marsala Wine
- 1 pound pasta (seashell, orecchieto or other)
- 1/2 lb frozen artichoke hearts, thawed
- 3/4 c grated Parmesan
- 1/2 c cream
Cheeseburger Pie

This is a twist on Sheperd's Pie, except it has a bisquit crust instead of the traditional mashed potatoes
- 2 Carrots chopped
- 1 Large Onion Chopped
- 1 T Olive Oil
- 1 T Butter
- 1/2 t Salt
- 1/4 t Pepper
- 1/2 t Bouquet Garni
- 1 Lb Ground Beef (Lean)
- 11/2 C Shark Cheddar cheese (or 1 C Cheddar and 1/2 c Parmesan)
- 1 c Bisquick Mix
- 1 C Milk
- 2 eggs
- 1/2 c Peas or 1 c spinach(optional)
Frittata - Carmelized Onion, Sausage and Cheese

You can customize this Fritata recipe with whatever fillings you like but use the same technique
- 1 onion sliced thinly
- 6 small breakfast sausage (I like maple syrup)
- 6 eggs
- milk
- 1 c shredded Cheddar cheese
