Spicy Apple Glazed Meatballs

For Spicy Meatballs, in a large bowl whisk together egg and milk
- Spicy Meatballs
- 1 egg
- 1/4 cup milk
- 2 slices white or whole-wheat bread, torn
- 1 pound 85% lean ground beef
- 4 cloves garlic, minced
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 tablespoon vegetable oil
- Apple Glaze
- 1 cup apple juice or pear nectar
- 1/4 cup reduced-sodium soy sauce
- 3 tablespoons packed brown sugar
- 1 1/2 teaspoons cornstarch
- 1 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 6 green onions, chopped
Drunken Sailor Rum Cupcakes

Cupcakes: 1. Preheat the oven to 350 degrees
- Cupcakes:
- 3 cups gluten free or regular flour
- 1 1/2 cups granulated sugar
- 1/2 cup packed light brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon xanthan gum if making gluten free
- 1 cup (2 sticks) unsalted butter, room temperature
- 2/3 cup milk
- 1/3 cup gold or dark rum
- 3 eggs
- Frosting:
- 1 1/2 sticks (6 ounces) unsalted butter, room temperature
- 3 plus 1/2 cups confectioners/powdered sugar
- 6 tablespoons crushed pineapple, well drained
- 2 tablespoons pineapple juice
- 1/4 lemon, juiced (can be squeezed into the recipe)
Cheesy O'Brien Egg Scramble

In a large skillet, prepare hash browns according to package directions
- 1 package (28 ounces) frozen O'Brien potatoes
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
- 1 pound sliced bacon, cooked and crumbled
- 12 eggs, lightly beaten
- 2 tablespoons butter
- 2 cups (8 ounces) shredded cheddar cheese
Cake Batter Puppy Chow

1. Melt Almond Bark according to the package directions, adding vegetable shortening to thin if desired
- 5 cups Chex cereal (I prefer the Rice Chex)
- 10 oz (5 squares) vanilla flavored Almond Bark
- 1 1/2 cups yellow cake mix
- 1/2 cup powdered sugar

Bacon, Cheese & Potato Chowder

MIX milk and soup in large saucepan
- 3 cups fat-free milk
- 1 can (10-3/4 oz.) condensed cream of potato soup
- 2 cups frozen Southern-style hash browns
- 1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
- 2 slices OSCAR MAYER Bacon, cooked, crumbled
- 2 green onions, thinly sliced
Pineapple Breeze

Place the ice into a 16-ounce glass
- 3 cups ice cubes
- 4 (1.5 fluid ounce) jiggers coconut-flavored rum (such as Malibu®)
- 1 (12 ounce) can lemon-lime soda (such as Sprite®)
- 1/2 cup pineapple juice, or to taste
- 1/2 cup orange juice, or to taste
Chinese Napa Cabbage Salad

Chinese Napa Cabbage Salad tossed with ramen noodles, slivered almonds and a sesame soy dressing
- 1 (3 ounce) package chicken flavored ramen noodles
- 1/4 cup butter
- 1/2 cup sesame seeds, toasted
- 1/2 cup blanched slivered almonds
- 1 large head napa cabbage, shredded
- 6 green onions, chopped
- 1/4 cup vegetable oil
- 1/4 cup rice wine vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1/8 cup white sugar
Homemade Thin Mints

In a small bowl, whisk together flour, cornstarch, cocoa powder and salt
- 2 1/4 cups all purpose flour
- 1/4 cup cornstarch
- 6 tbsp unsweetened cocoa powder
- 1/2 tsp salt
- 1 cup white sugar
- 1/2 cup butter, room temperature
- 1/3 cup milk (any kind)
- 1/2 tsp vanilla extract
- 3/4 tsp peppermint extract
Curried Cauliflower Casserole

Set oven to 350 degrees. Butter an 8-inch baking dish
- 1 large head cauliflower (cut into large florets)
- 1 (10 ounce) can cream of chicken soup, undiluted
- 1 1/4 cups grated cheddar cheese
- 1/2 cup grated parmesan cheese, divided
- 1/3 cup mayonnaise
- 3 tablespoons melted butter
- 2 teaspoons curry powder (or to taste)
- salt (optional)
- black pepper
- 1 cup crushed butter flavored cracker (Ritz is best)
Sloppy Joes Bread Bowls

Start browning the ground meat then add garlic, onion, green bell peppers, seasoning salt, black pepper
- Meat filling:
- 5 Kaiser or Hoagie style rolls
- White melting cheese (I used a combo of provolone and mozzarella)
- 1 lb of ground lean meat (I used chicken... pork, beef, turkey can be substituted)
- 1/2 cup of onion chopped
- 1/2 cup of diced green bell pepper
- 1-2 cloves of grated garlic
- red chili flakes to taste
- seasoning salt and black pepper to taste
- Ingredients for the sloppy sauce
- 8oz can of plain tomato sauce
- 1 Tbs of paprika
- 1 Tbs of sriracha (if you like it spicy)
- 1 Tbs of Worcestershire sauce
- 1/2 Tbs of vinegar
- 2-3 Tbs of brown sugar (sloppy joe's are sweet and tangy so it depends on how sweet you want it)
