Strawberry Cheesecake Bars

Preheat oven to 375 degrees F
- 1 (18.25-ounce) package strawberry cake mix
- 1/2 cup butter, melted
- 1 large egg, lightly beaten
- 1 (8-ounce) package cream cheese, softened
- 1 (16-ounce) package powdered sugar
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla extract

- 1 can orange juice concentrate, slightly thawed
- 1 cup milk (half and half, cream, nut milk, soy milk)
- 1/2 cup sugar, or to taste (you can reduce the sugar or use an alternate sugar substitute such as Stevia but it won’t taste as close to classic Orange Push-Ups. Many people use much more than 1/2 cup, myself included. I used about 1 cup in my version)
- 1/2 teaspoon vanilla extract
- 2 cups ice, or to taste
Crockpot Broccoli Cheese Soup

1 Sauté onion and green pepper in butter
- 1/2 cup green pepper, chopped
- 1/2 cup onion, chopped
- 2 tablespoons butter or 2 tablespoons margarine
- 1 (10 ounce) can cream of chicken soup
- 1 1/2 cups milk
- 1 lb Velveeta cheese, cubed
- 1 (10 ounce) package frozen chopped broccoli
Jensen Bars

Bars: Preheat the oven to 350F
- Bar ingredients:
- 1 1/4 cups (2 1/2 sticks) of unsalted butter, cut into about 6 pieces for easier melting
- 2 1/4 cups of all-purpose flour
- 1 1/2 teaspoons of baking Powder
- 2 teaspoons of salt
- 1 1/4 teaspoon of ground cinnamon
- 1 teaspoon of espresso powder (I should have used 1 1/2)
- 2 1/4 cups of firmly packed light brown sugar
- 3 eggs, slightly beaten
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of almond extract
- Butterscotch sauce (adapted from smitten kitchen)
- ingredients:
- 1/4 cup (half a stick) of butter
- 1/2 cup of packed light brown sugar
- 1/2 cup of heavy cream
- 1/2 teaspoons of kosher salt (use more or less to suit your taste)
Lemon Yogurt Cake

Preheat the oven to 350 degrees F
- Cake:
- 1 1/2 C. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. kosher salt
- 1 C. plain whole-milk yogurt
- 1 1/3 C. sugar, divided
- 3 extra-large eggs
- 2 tsp. grated lemon zest (2 lemons)
- 1/2 tsp. pure vanilla extract
- 1/2 C. vegetable oil
- 1/3 C. freshly squeezed lemon juice
- Glaze:
- 1 C. confectioners’ sugar
- 2 Tbs. freshly squeezed lemon juice
