Carmalized Onion Dip

Heat oil in a medium frying pan over medium-low heat
- 1 tablespoon olive oil
- 1 medium yellow onion, medium dice (about 2 cups)
- 1 medium garlic clove, finely chopped
- 1 cup sour cream
- 4 ounces fresh chèvre (goat cheese)
- 1/4 cup finely chopped fresh chives

Preheat oven to 375F. Lightly butter an 11-inch diameter circle in the center of a baking sheet
- 3/4 cup whole wheat pastry flour
- 1 1/2 cups all purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, chilled
- 2 large eggs
- 1/2 cup milk
- 2 tsp vanilla extract
- 1 tsp orange zest
- 1 1/2 cups fresh or frozen cranberries

- 3/4 cup all purpose flour
- 1/4 cup firmly packed light brown sugar
- 1/8 tsp ground cinnamon
- 1/4 cup unsalted butter, chilled

In a soup pot, heat the EVOO over medium-high heat
- 2 tablespoons extra-virgin olive oil (EVOO)
- 1 pound ground beef sirloin
- Salt and pepper
- 1 large onion, finely chopped
- 2 carrots, peeled and grated
- 3 - 4 cloves garlic, finely chopped
- 1 32 ouncecontainer (4 cups) chicken broth
- 1 28 ouncecan Italian crushed tomatoes
- 1 pound lasagna noodles, broken into jagged pieces
- 1 cup basil leaves, torn
- 1 cup whole-milk ricotta
- Grated parmigiano-reggiano cheese, to pass around the table

Roadside Diner Cheeseburger Quiche

In a large skillet, cook beef over medium heat until no longer pink; drain
- 1 refrigerated pie crust (or make your own or use a frozen deep-dish pie shell)
- 3/4 lb. ground beef
- 2 plum tomatoes, seeded and chopped
- 1 medium onion, chopped
- 1/2 cup dill pickle relish
- 1/2 cup crumbled cooked bacon
- 5 eggs
- 1 cup heavy whipping cream
- 1/2 cup milk
- 2 teaspoons prepared mustard
- 1 teaspoon hot pepper sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/2 cups (6 oz.) shredded cheddar cheese (I used extra sharp)
- 1/2 cup shredded Parmesan cheese
- Optional garnishes: Additional pickle relish, crumbled cooked bacon, chopped onion and tomato, mayonnaise and shredded lettuce

- 1 (20 oz) bag Simply Potatoes Shredded Hash Browns; OR 3-1/2 cups shredded russet potatoes, rinsed and squeezed dry in a towel
- 3 green onions, chopped (approx. 1/3 cup), both white and green parts
- 1/2 cup grated Parmesan cheese
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoon olive oil

- 1 cup butter or margarine, softened
- 1 tbsp grated fresh lime peel
- (from about 2 limes)
- 1 large egg yolk
- 1/2 tsp vanilla extract
- 2 1/4 cups all purpose flour
- 1/4 tsp salt
- Coconut Filling
- 1 large egg white
- 2 tbsp granulated sugar
- 3/4 cup sweetened flaked coconut
- 1/2 cup sliced almonds
- 1/2 cup dried pineapple, finely chopped
- 1/2 cup dried papaya or mango, finely chopped
- 2 tsp fresh lime juice
Pineapple Lemonade Sangria

In a one gallon pitcher, combine the wine, lemonade, rum, Triple Sec and simple syrup
- 1 (large) bottle of Chardonnay
- 1 (12 ounce) can of frozen lemonade
- 1/2 cup of Light Rum
- 1/2 cup of Triple Sec
- 3/4 cup of simple syrup
- 1 large (approximately 20 ounce) can of pineapple chunks or tidbits, in juice
- 1 apple, unpeeled, cored, quartered and cut into chunks (I used a Gala)
- 1 orange, halved and sliced thin
- 1 lemon, halved and sliced thin
- 6 strawberries, sliced
- 1 can of lemon-lime soda (like 7-up, Sprite, Sierra Mist)
- Whole strawberries, or lemon or orange slices, for garnish, optional
- Maraschino cherries, for garnish, optional

- 2 cups ginger ale, chilled
- 2 large firm bananas, sliced
- 1/2 cup sugar
- 2 tablespoons all-purpose flour
- 1 egg, lightly beaten
- 2 tablespoons butter
- 1 cup heavy whipping cream
