Chicken Bacon Wild Rice Soup

In a large saucepan, combine chicken broth and water
- 3 (10 3/4 oz) cans condensed chicken broth
- 2 cups water
- 1/2 cup uncooked wild rice, rinsed
- 1/2 cup finely chopped green onions
- 1/2 cup margarine or butter
- 3/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon poultry seasoning
- 1/8 teaspoon pepper
- 2 cups half and half
- 1 1/2 cup cubed or shredded cooked chicken or turkey
- 8 slices bacon, crisply cooked and crumbled
- 1 tablespoon chopped pimiento
- 2-3 tablespoons dry sherry, if desired
Blue Bayou Monte Cristo Sandwich

Line a cookie sheet with paper towels; set aside
- 1 egg
- 1 3/4 cups plus 2 tablespoons water
- 1 3/4 cups all-purpose flour
- 1/4 teaspoon salt

- 8 slices egg bread (challah works well), sliced 1/2-inch thick

- 2 medium sized, ripe peaches, peeled, halved and pitted
- 1/2 cup lemonade

- 1/4 cup butter

- 1/2 cup granulated sugar

- 3/4 to 1 1/4 teaspoons ground nutmeg, to taste (I used 3/4)
- 1 teaspoon cinnamon

- 2 2/3 cups all-purpose flour
- 1 cup milk
- For the Glaze
- 3 tablespoons butter; melted
- 1 cup confectioners’ sugar; sifted
- 3/4 teaspoon vanilla
- 2 tablespoons hot water

- 3 tbsp sugar
- 2 1/4 tsp active dry yeast
- 6 tbsp unsalted melted butter
- 1 cup milk
- 3 1/2 cups unbleached all-purpose flour

- 1 egg + 1 egg yolk, at room temperature
- 2 teaspoons vanilla extract
