Butterfinger Nutter Butter Cheesecake Bars

Preheat oven to 325 degrees
- For the crust
- 16 whole nutter butter cookies
- 1/4 cup melted butter
- For the cheesecake filling
- 8 oz. cream cheese, softened
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 tablespoon all purpose flour
- 6 fun size Butterfinger chocolate bars
- For the topping
- 3/4 cup semi sweet chocolate chips
- 3 tablespoons butter
Cannoli Cupcakes

Preheat the oven to 375 degrees, and line two muffin pans with cupcake wrappers
- Dry ingredients:
- 2 and 1/2 cups flour
- 2 and 1/2 tsp baking powder
- 1/2 tsp salt
- 1 3/4 cups sugar
- Wet ingredients:
- 1/2 cup butter, softened
- 3 eggs
- 1 1/2 tsp vanilla
- 1 Tbsp Marsala wine
- 1 cup milk
- 1 cup ricotta cheese
- 1 tsp orange zest
- 2 Tbsp powdered sugar
- 1 cup chocolate chips
- For the frosting:
- 1 and 1/2 sticks butter, softened
- 3/4 cup shortening
- 1 and 1/2 tsp vanilla extract
- 6 cups powdered sugar
- 3 Tbsp milk
- 1 vanilla bean, split and scraped
Green Monster Spinach Smoothie

Combine all ingredients in a blender and blend until smooth
- 1 frozen sliced banana
- 1 Tablespoon peanut butter
- 1/2 cup 0% Vanilla Chobani Greek yogurt
- 1 cup Unsweetened Vanilla Almond Breeze (or other kind of milk)
- 4 cups baby spinach (or more, or less)
Kimchi Fried Rice

Heat up a wok with 1/4 tablespoon oil and cook the egg sunny side up
- 2 tablespoons oil
- 1 large egg
- 1 clove garlic, finely minced
- 1/4 small onion, finely diced
- 1/2 cup kimchi, cut into small pieces + 1 tablespoon kimchi juice
- 2 cups overnight steamed white rice
- 1 tablespoon soy sauce or to taste
- 1/4 teaspoon sesame oil
- 3 dashes black pepper
- 1 stalk scallion, cut into small rounds
Santa Fe Enchiladas

Crumble beef into a large microwave-safe bowl; stir in onion
- 1 1/2 pounds lean ground beef
- 1 medium onion, chopped
- 1 (12 ounce) can tomato paste
- 1 cup water
- 1 (1.25 ounce) package taco seasoning
- 10 (6 inch) flour tortillas, warmed
- 1 (8 ounce) jar process cheese sauce
- 1 (4 ounce) can chopped green chilies
Macaroon Kiss Cookies

Macaroon kiss cookies are little balls of deliciousness topped with a kiss on top! These are great of any occasion!
- 2 1/2 cups all purpose flour
- 1 tablespoon plus 1 teaspoon baking powder
- 1/2 teaspoon table salt
- 2/3 cups butter, softened
- 6 ounce cream cheese, softened
- 1 1/2 cups granulated sugar
- 2 egg yolks
- 1 tablespoon plus 1 teaspoon Vanilla extract
- 1 tablespoon plus 1 teaspoon juice from a fresh orange
- 10 cups sweetened flaked coconut, divided in to 6 cup and 4 cup portions
- 1 bag hershey kisses
Orange Applesauce Cupcakes

In a large bowl, cream the butter and brown sugar until light and fluffy
- FROSTING:
- 6 tablespoons butter, softened
- 1 cup packed brown sugar
- 1 egg
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 teaspoon grated orange peel
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 cup chopped pecans
- 1/4 cup butter, softened
- 2 cups confectioners' sugar
- 1-1/2 teaspoons grated orange peel
- 2 to 4 teaspoons orange juice
Cherry Chocolate Nut Bars

Melt chocolate chips and peanut butter on low in the microwave
- 12 ounces milk chocolate chips
- 3/4 cup chunky peanut butter
- 12 ounces salted peanuts, chopped
- 1 package (10.5 ounce) miniature marshmallows
- 1 container cherry frosting (16 ounce)
Split Pea, Potato, Ham and Leek Soup

Set the crockpot on high and then layer the leeks, onion and potatoes into the bottom of the pot
- 2 leeks, sliced thin, washed and rinsed very well
- 1 large onion, diced
- 8 baby red potatoes, diced into bite size pieces
- 1-2 cloves of garlic, I used 2 large ones
- 2 bay leaves
- 1 teaspoon thyme
- 1 ham bone
- 1 1/2 cups dried split peas
- 3 cups chicken broth, if using homemade stock, be sure to adjust the salt accordingly
- 3 cups water
- salt and fresh cracked pepper to taste
Caramel Appletini Cupcakes

To make cupcake– Preheat oven 350F
- For apple cupcake
- 2-3 apples, granny smith* (I used 3 apples)
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup oil
- 1/4 cup apple juice
- 1 teaspoon vanilla
- green food coloring to desired color
- You can probably substitute with equivalent amt of applesauce but I have not tried it yet
- For caramel apple frosting
- 4 tablespoons butter
- 1/2 cup packed dark brown sugar
- 4-5 tablespoons milk
- 3-4 teaspoons apple vodka, to taste (I used 4 tsp Smirnoff)
- 4 cups powdered sugar, sifted
- For caramel drizzle
- 1/2 cup evaporated milk (I substituted with heavy cream)
- 4 oz individually wrapped caramels, unwrapped (I used about 16 Wether’s chewy caramels)
