Crockpot Creamy Tortellini Soup

Place dry white sauce mix in a 3-1/2- or 4-quart slow cooker
- 1-1 1/2 - 2 ounce envelope white sauce mix
- 4 cups water
- 1-14 ounce can vegetable broth
- 1 1/2 cups sliced fresh mushrooms
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1/2 teaspoon dried basil, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon dried oregano, crushed
- 1/8 teaspoon cayenne pepper
- 1 -7 - 8 ounce package dried cheese tortellini (about 2 cups)
- 1-12 ounce can evaporated milk
- 6 cups fresh baby spinach leaves or torn spinach
- Ground black pepper (optional)
- Finely shredded Parmesan cheese (optional)
Cheesy Bacon Oven Chips

Chips 1. Preheat oven to 375 degrees
- Chips
- 1 large, uniformly-shaped russet potato, scrubbed well and sliced into 1/8″ rounds*
- cooking spray
- 3/4 C. shredded colby jack or cheddar cheese
- salt & pepper to taste
- 2 T. crumbled bacon (about 2 slices) – I used real bacon bits
- chopped parsley or chives, for garnish (optional)
- Chipotle Ranch Dipping Sauce
- 1 T. ranch dressing
- 3 T. sour cream
- 1/4 t. chipotle chili powder
- 1/8 t. cayenne (adjust more or less depending on how spicy you want).
- 1/8 t. salt
- 1/8 t. garlic powder
Baklava Muffins

Preheat to 400F. Mix all the filling ingredients together in a small bowl, and then get on with the muffins
- for the filling:
- 1/2 cup chopped walnuts
- 1/3 cup sugar
- 1 1/2 tsp cinnamon
- 3 TBSP melted butter
- for the muffins:
- 1 cup plus 7 TBSP all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup sugar
- 1 large egg
- 3 TBSP unsalted butter, melted
- 1 cup plus 2 TBSP buttermilk
- for the topping:
- 1/2 cup honey
Margarita Bars

Preheat the oven to 350 degrees and grease an 8×8″ baking dish
- For the crust:
- 1 cup flour
- 1/2 cup powdered sugar
- 1 tsp salt
- 1/2 cup butter, melted
- For the filling:
- 2 eggs, lightly beaten
- 1 cup granulated sugar
- 2 Tbsp flour
- 1/4 tsp salt
- 2 Tbsp tequila
- 1 Tbsp triple sec
- 2 Tbsp fresh lime juice
- 2 tsp lime zest
- 1 drop green food coloring (optional)
- Powdered sugar, for dusting
Coconut Mocha Brownies

Preheat the oven to 350
- For the brownies:
- 1 1/3 cups white whole wheat flour
- 1 tbs espresso powder
- dash salt
- 11 ounces dark chocolate, melted and cooled
- 1 cup nonfat vanilla yogurt
- 1 1/4 cup turbinado sugar
- 1 cup egg substitute
- 1 1/2 tsp vanilla extract
- 1/2 tsp coconut extract
- 1 cup shredded unsweetened reduced fat coconut
- 2/3 cup dark chocolate chips
- For the frosting:
- 12 oz reduced fat cream cheese
- 1/4 cup + 2 tbs unsweetened cocoa powder (dutch process or special dark are best)
- 2 tsp espresso powder
- 1 1/2 cups powdered sugar
- 1 1/4 oz dark chocolate, melted and cooled
- 1/2 tsp vanilla extract
- 1/2 tsp coconut extract
- extra shredded coconut for topping (optional)

- 1 carton (8 ounces) frozen fat-free whipped topping, thawed
