Cowboy Casserole

It’s comfort food on a fork
- 1 1/2 pounds ground beef (I used 80/20)
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 1 can (15.25 ounces) whole kernel corn, drained
- 1 can condensed cream of mushroom soup
- 2 cups cheddar cheese, shredded
- 1/2 cup milk
- 4 tablespoons sour cream
- 1 bag (30 ounce) frozen tater tots (I used Ore-Ida Crispy Crowns)
Avalanche Bars

In microwave-safe bowl pour in white chips and heat on 50% power for 1 minute
- 12 oz bag of White Chocolate Chips
- 1/4 cup creamy peanut butter
- 3 cups Rice Krispies
- 1 1/2 cups mini marshmallows
- 1/4 cup mini chocolate chips + 2 Tbsp for garnish.
- Lightly grease a 9x9 pan
Teriyaki Burger with Mango Pineapple Salsa

To make the salsa, combine all the ingredients in a medium bowl
- For the salsa:
- 1 mango, diced
- 1-1 1/2 cups diced fresh pineapple
- 1/2 of one red bell pepper, diced small
- 1/4 cup red onion, finely diced
- 1 tbsp. minced fresh cilantro
- Juice of one lime
- Pinch of coarse salt
- For the sauce:
- 1 cup fresh chopped pineapple
- 1/2 cup low sodium soy sauce
- 1 inch knob of ginger, peeled and minced fine
- 3 tbsp. brown sugar
- 2 cloves garlic, minced
- 1/2 tsp. vinegar (apple cider or rice vinegar)
- 1/2 tsp. sesame oil
- 1 tbsp. cornstarch
- 1 tbsp. cold water
- For the burgers:
- 1 lb. ground sirloin
- 2 tbsp. finely chopped yellow onion
- 1 tsp. minced garlic
- 1 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1 or 2 dashes of Worcestershire sauce
Cheesy Barbecue Casserole

1 Heat oven to 350°F. Spray 2-quart casserole with cooking spray
- 3 cups uncooked ziti pasta (11 oz)
- 1 lb lean (at least 80%) ground beef
- 1 medium onion, chopped (1/2 cup)
- 1/4 cup chopped fresh parsley
- 1 cup milk
- 1 cup barbecue sauce
- 1 cup shredded mozzarella cheese (4 oz)
- 1 1/2 cups shredded Cheddar cheese (6 oz)
Butter Pecan Crunch

Combine cracker crumbs and butter; press into a 13-in
- 2 cups graham cracker crumbs
- 1/2 cup butter, melted
- 2 cups milk
- 2 packages (3.4 ounces each) instant vanilla pudding mix
- 1 quart butter pecan ice cream, softened
- 1 carton (8 ounces) frozen whipped topping, thawed
- 2 Heath candy bars (1.4 ounces each), crushed
Peachy Cream Pie

In a large saucepan, combine sugar and cornstarch
- 3/4 cup sugar
- 5 teaspoons cornstarch
- 1-1/2 cups cold water
- 1 package (3 ounces) peach, apricot or orange gelatin
- 1-1/2 cups frozen unsweetened peach slices, thawed
- 1 package (3 ounces) cream cheese, softened
- 3 tablespoons confectioners' sugar
- 1 tablespoon milk
- 1-1/2 cups whipped topping
- 1 extra-servings-size graham cracker crust (9 ounces)
Salsified Chicken And Rice

Heat olive oil in a large skillet over medium-high heat
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 pound skinless, boneless chicken breast halves - cubed
- 1 (14.5 ounce) can chicken broth
- 1 (8 ounce) jar salsa
- 2 cups instant rice
- 8 ounces shredded Cheddar cheese
Chocolate Rum Cheesecake

Directions: Position a rack in the center of an oven and preheat to 325 degrees
- For the crust:
- 1 1/4 cups graham cracker crumbs
- 1 tablespoon granulated sugar
- 4 tablespoons (1/2 stick) unsalted butter, melted
- For the filling:
- 6 oz bittersweet baking chocolate
- 1/4 cup rum (I used dark rum)
- 1 lb cream cheese
- 3/4 cup superfine sugar
- 1/2 cup sour cream
- 1 tablespoon vanilla extract
- 4 extra-large eggs
Creamy Cauliflower Soup

Heat the olive oil into a large stock pot
- 2 tablespoons olive oil
- 3 large yellow onions, chopped
- 2 garlic cloves, chopped
- 200 gr sticky bacon, cut into small cubes
- The leaves of 2 thyme springs
- 1 cauliflower head, washed, and cut into florets
- 7 cups of chicken stock
