Penne Rustica

1.For Gratinata Sauce: Saute butter, garlic, and rosemary until garlic begins to brown
- Gratinata sauce ( use 4 1/2 cups )
- 1 teaspoon butter
- 1 teaspoon chopped garlic
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon dill
- 1/2 teaspoon chopped rosemary
- 1/2 cup marsala cooking wine
- 1/8 teaspoon cayenne pepper
- 4 cups heavy cream
- Penne Rustica
- 1/2 ounce pancetta or bacon (I used an ounce which was 1 strip of bacon for me)
- 9 raw shrimp, peeled and deveined
- 6 ounces grilled chicken breasts, sliced (1 large breast or 2 small)
- 8-12 ounces penne pasta, cooked
- 1 1/2 teaspoons chopped pimiento (optional)
- 3 Tablespoons butter
- 1/2 teaspoon chopped shallot
- pinch salt and pepper
- 1/2 cup parmesan cheese
- 1/4 teaspoon paprika
- 3 sprigs fresh rosemary (for garnish)
Cinnabon Popcorn

Preheat oven to 250 degrees *You can use air popped or microwave popcorn
- 12 C popped popcorn (about 1/2 C kernels or around 1 1/2 bags of microwave popcorn for me)
- 1 cup pecan halves, roughly chopped
- 1 cup brown sugar
- 3/4 teaspoon cinnamon
- 1/4 cup karo syrup (or honey makes a good substitution)
- 1 stick real butter (1/2 cup)
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- 3 squares almond bark (about 4 oz)
Coconut Lemon-Lime Tassies

Divide each rectangle of pastry into 24 1-inch squares
- Filling:
- 3 TBSP all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 4 large egg yolks
- 1 1/4 cups sugar
- 3 TBSP fresh lime juice
- 3 TBSP fresh lemon juice
- 2 tsp freshly grated lemon zest
- 2 tsp freshly grated lime zest
- 1 cup chopped sweetened, flaked coconut, divided

- 1 cup unsalted butter, at room temperature
- 8 ounces cream cheese, at room temperature
- 2 1/4 cups all-purpose flour, spooned in and leveled, divided

- 2 cups powdered sugar
- 2-3 TBSP hot milk
- 1 TBSP corn syrup
- 1/2 tsp vanilla extract

Praline-Peach Muffins

Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups or line with paper baking cups
- Topping
- 1/4 cup packed brown sugar
- 1/4 cup chopped pecans
- 1 tablespoon firm butter or margarine
- Muffins
- 1/2 cup packed brown sugar
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla
- 1 egg
- 1 2/3 cups Gold Medal® all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup chopped fresh peach
- 1/2 cup coarsely chopped pecans
Polkadot Cheesecake

Preheat oven to 300 degrees F
- Crust
- 1 cup Graham crumbs
- 1/4 cup cocoa
- 2 tbsp sugar
- 1/4 cup melted butter
- Filling
- 16 oz softened cream cheese
- 1/2 cup sugar
- 2 eggs
- 2 oz dark chocolate, melted
- 1 tsp vanilla
- 2/3 cup sour cream
Pineapple Fried Rice

Cut The Pineapple In Half Lengthwise, And Scoop Out The Fruit
- 1 Pineapple, Medium Size
- 4 Ounces Sliced Chicken
- 3 Tablespoons Chopped Shallots
- 1/2 Tablespoon Ginger, Ground
- 1 Tablespoon Chopped Cilantro
- 2 Tablespoons Dried Shrimp
- 3 Tablespoons Garlic, Coarsely Chopped
- 2 Tablespoons Fish Sauce
- 1 Teaspoon Granulated Sugar
- 2 Cups Steamed Rice
Creamy Mints

Beat the cream cheese until soft and fluffy, about two minutes
- 3 tablespoons reduced fat cream cheese, softened
- 1/4 teaspoon mint extract
- food coloring (optional) - i used a few drops of yellow to get a very soft butter color
- 4 to 4 1/2 cups confectioners sugar
- 1/4 about 1/4 cup superfine or granulated sugar
Beer-Cheese Mac and Sausages

Heat oven to 350°F. Spray 2 1/2-quart casserole with cooking spray
- 1 package (7 oz) elbow macaroni (2 cups)
- 3 tablespoons butter
- 1/4 cup finely chopped onion
- 3 tablespoons Gold Medal® all-purpose flour
- 2 cups half-and-half
- 1 teaspoon ground mustard
- 1/2 teaspoon red pepper sauce
- 1/4 teaspoon salt
- 1 cup beer or non-alcoholic beer
- 2 cups shredded marble jack cheese (8 oz)
- 1 package (1 lb) cocktail-size fully cooked smoked sausages
- 2 cups popped microwave popcorn
Chocolate Caramel Shortbread

Strawberry Cheesecake Mousse

- 8 oz (224 g.) package cream cheese
- 10 oz. - 2 cups, ( 283 g.) fresh strawberries, stems removed, washed and sliced
- 1/2 cup (125 ml) 4 oz. heavy cream
- 1/2 cup (55g.) powdered sugar
- 1 tsp vanilla
