Preheat oven to 325 degrees F
- Blueberry Sauce:
- 1 pint fresh or frozen blueberries
- 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
- 2 teaspoons grated lemon peel
- 3/4 cup cold butter or margarine
- 2 cups biscuit baking mix, divided
- 1/2 cup firmly packed brown sugar
- 2 tablespoons cold butter or margarine
- 1/2 cup chopped nuts
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup water
- 1 pint blueberries

- Cookie Dough:
- The Blue-Eyed Bakers' Chocolate Chip Cookie dough (recipe follows)
- 6 small ramekins (about 4" diameter)
- Vanilla ice cream
- 1 stick unsalted butter, cold & cubed
- 1 stick margarine, cold & cubed
- 1/2 cup granulated sugar
- 1 cup light brown sugar
- 1/2 cup dark brown sugar
- 2 eggs
- 3 cups all-purpose flour
- 1 teaspoon table or fine sea salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 cup semisweet chocolate, chopped or chips
- 1 cup milk chocolate, chopped or chips
Roasted Red Potatoes with Bacon, Garlic & Parmesan

1. Preheat the oven to 400 degrees
- 3 pounds red skinned gold potatoes (‘baby’ or about 2 inches wide)
- 4-6 slices Uncured bacon, cooked, halved lengthwise and chopped
- 2 tablespoons olive oil
- 3 garlic cloves, roughly chopped
- salt and ground black pepper
- Fresh grated Parmesan cheese
- 1/4 cup chopped flat-leaf parsley, minced
Pineapple Jam

In a saucepan, combine all ingredients
- 2 medium ripe fresh pineapple, peeled and finely chopped
- 1 cup sugar
- 2 tbsp lime juice
- 1/8 tsp cinnamon powder
- 1/8 tsp ground cloves

Preheat oven to 350. In a large skillet, cook sausage until well browned, stirring frequently
- 1/2 pound sausage
- 1 1/2 cups cheddar cheese, grated
- 1 can (10 oz) Rotel tomatoes, drained (I pulse mine the the food processor)
- 2 eggs
- 1/4 cup Ranch dressing
- 1/4 cup sour cream
- 1/3 cup milk
- 1 9-inch unbaked deep dish pie shell
Chocolate Peanut Butter Torte

To make the crust, preheat the oven to 350 degrees F
- For the crust:
- 32 Oreo cookies, finely processed into crumbs
- 5 1/3 tbsp. unsalted butter, melted and cooled
- Small pinch of salt
- For the crunch:
- 1 1/4 cups salted peanuts, finely chopped, divided (for the filling, crunch and topping)
- 1/2 cup mini chocolate chips
- 2 tsp. sugar
- 1/2 tsp. espresso powder
- 1/4 tsp. ground cinnamon
- Dash of ground nutmeg
- For the filling:
- 2 cups heavy cream
- 1 1/4 cups confectioners’ sugar, sifted
- 12 oz. cream cheese, at room temperature
- 1 1/2 cups creamy peanut butter (not natural)
- 2 tbsp. whole milk
- For the topping:
- 1/2 cup heavy cream
- 4 oz. bittersweet chocolate, finely chopped
Miss Hilda's Popcorn Cake

Grease a large tube or bundt cake pan with 2 teaspoons of the oil, and set aside
- 2 teaspoons plus 1/4 cup vegetable oil
- 12 cups popped popcorn (plain, unsalted and unbuttered)
- 2 cups M & M candies
- 1 cup lightly salted cocktail peanuts
- 1 stick unsalted butter
- 1 pound marshmallows
Olive Garden Pasta E Fagioli Soup

This tastes exactly like the pasta e fagioli soup at the Olive Garden
- 2 lbs ground beef
- 1 onion, chopped
- 3 carrots, chopped
- 4 stalks celery, chopped
- 2 (28 ounce) cans diced tomatoes, undrained
- 1 (16 ounce) can red kidney beans, drained
- 1 (16 ounce) can white kidney beans, drained
- 3 (10 ounce) cans beef stock
- 3 teaspoons oregano
- 2 teaspoons pepper
- 5 teaspoons parsley
- 1 teaspoon Tabasco sauce (optional)
- 1 (20 ounce) jar spaghetti sauce
- 8 ounces pasta

- 1 1/2 lbs. (750 g) sugar

- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- zest of one large lime, finely minced
- 3 tbsp lime juice
- 1/2 cup unsweetened toasted coconut
- 1/2 cup sugar for rolling cookies
