Taco Pasta

Cook pasta according to the package directions
- 1 lb. grass-fed ground beef
- 8-12 ounces medium pasta shells
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 (14 oz.) can diced tomatoes with mild green chilies, or just plain diced tomatoes
- 1 packet taco seasoning
- 3 ounces cream cheese
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- Salt and pepper
Stuffed Breakfast Bubble Biscuits

Cook your bacon until crisp so it will break easily into pieces
- Pillsbury Buttermilk Biscuits - I used 2 1/2 cans out of a small 4 pack
- Shredded Cheese (I had Mexican style on hand)
- Frozen Shredded Hash Browns
- 1 package of Cooked Bacon
- 6 Scrambles Eggs
- One Egg for top of Biscuits
Easy Fruit Trifle

Layer fruit in a large bowl or trifle bowl
- fresh pineapple
- fresh strawberries
- seedless green grapes
- seedless red grapes
- bananas
- 1 1/4 cups milk
- 1/2 cup sour cream
- 8 oz. crushed pineapple
- 1 (3.25 oz) package instant banana cream pudding

Blueberry Graham Frozen Greek Yogurt

- Make sure your ice cream maker is in the freezer for at least 24 hours before use
- 32 oz 2% Low Fat Greek Plain Yogurt
- 3/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp vodka (to keep the froyo from freezing too much in the freezer)
- 3/4 cup fresh or frozen blueberries
- 4 tbsp granulated sugar
- 1/2 tbsp lemon juice
- 5 graham crackers, crushed

- 1 large onion, finely chopped
- 1 bunch of green onions, chopped
- 2 celery ribs, finely chopped (optional)
- 1 medium green peppers, finely chopped
- 1 medium sweet red pepper, finely chopped
- 1 tablespoon vegetable oil
- 1 garlic clove, minced
- 1 (4oz) can chopped green chilies
- 3 cups cubed cooked chicken breast
- 1 can (10-3/4 ounces) cream of celery soup, undiluted
- 1 can (10-3/4 ounces) cream of chicken soup, undiluted
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1 (14 ounce) can of corn
- 1 tablespoon chili powder
- 12 corn tortillas (6 inches), cut into 1-inch strips
- (*you can substitute flour tortillas here if you prefer.)
- 2 cups (8 ounces) shredded cheese, divided
