Mom's Perfect Pork Chops

Add to Recipe Box , but the way we have pork chops most regularly is with a simple dry rub and pan frying
- 4 pork chops
- 1 teaspoon bacon fat, grapeseed oil, or olive oil (or other high smoke point oil)
- Salt
- 1-2 teaspoons of dry rub*
- 1/4 cup cumin seeds
- 3 Tbsp whole black peppercorns
- 1 Tbsp coriander seeds
- 2 Tbsp sugar
- 1 1/2 teaspoons sea salt
Mini “Martha Stewart” Meatloaf’s

12 individual Mini “Martha Stewart” Meatloaf’s
- TOPPING:
- 2 slices light whole grain bread, torn into pieces (or gluten free bread or ezekiel bread)
- 1 1/4 pounds lean ground turkey or lean ground beef
- 1/2 cup carrots, peeled
- 3/4 cup red bell pepper
- 1/4 cup white onion
- 1 egg
- 1/2 cup ketchup (I used low sugar Heinz ketchup)
- 1 teaspoon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoon BBQ sauce
- 1/2 teaspoon garlic powder

Christmas Bark Cookie Crunch

Cover a cookie sheet with waxed paper or foil
- 1 lb. white chocolate chips
- 14 Oreos, broken into pieces
- 1 and 1/2 cups pretzels, broken
- 1 cup peanut butter chips
- 1/2 cup peanuts
- 1/2 cup miniature Reese’s cups

Pumpkin Spice Cream Cheese Spread Recipe - Pinch My Salt

1. In a small bowl, beat softened cream cheese, sugar, and syrup til creamy
- 4 oz. cream cheese, softened
- 3 tablespoons brown sugar
- 2 tablespoons pure maple syrup
- 1/4 cup canned pumpkin
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon cinnamon
- 1/4 teaspoon vanilla extract

- 4 oz. Champagne, or Sparkling Cider/Water
- 2 oz. fresh pineapple juice
- 1/4 cup pineapple chunks
Easy Roasted Rosemary Chicken

Optional- place sliced onions on bottom of cooker along with minced garlic
- 6 skinless chicken breasts
- 1 can low sodium chicken broth
- Fresh onion & garlic (if you have them)
- 1/2 cup fresh chopped rosemary
- salt & pepper to taste

- 2 1/4 C. brownie mix (recipe in dry mixes)
- 2 eggs, beaten
- 1/3 C. canola oil (or melted butter or margarine)
- 2 tsp. vanilla extract
- 1/2 C. chopped nuts or chocolate chips (optional)

- 1 cup old-fashioned oats
- 1 cup whole wheat flour
- 3/4 cup packed brown sugar
- 1/2 cup all-purpose flour

- 1/4 tsp. ground black pepper

- 1 Tbsp. paprika
- 2 Tbsp. corn starch
- 1/2 onion, chopped in large pieces
- 1 (4 pound) boneless chuck roast
Mexican Rice Casserole

Preheat the oven to 350 degrees
- Casserole:
- 1 1/2 cups of white rice, prepared per instructions
- 1 tsp of olive oil
- 1 lb lean ground beef (I used 96/4)
- 1/2 sweet yellow onion, diced
- 3 cloves of garlic, minced
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp dried cumin
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2-1 tsp crushed red pepper flakes
- Sea salt and fresh cracked pepper, to taste
- 1 15 oz can of black beans, drained and rinsed
- 1 15 oz can of tomato sauce
- 3-4 tbsp fresh cilantro, chopped (divided)
- 1-2 cups of shredded cheddar cheese
- 3-4 tomatoes, sliced thickly
- Sour cream (topping)
- Salsa (topping)
- Guacamole (topping)
