Protein Poppers//No-Bake Energy Bites

Aprox. 85 calories per ball (assuming 24 balls per batch and using listed ingredients
- 1 cup dry oatmeal (the picture is deceiving, but I used rolled oats)
- 1/3 cup coconut flakes
- 1/2 cup nut butter (I used 1/4 cup almond and 1/4 cup peanut butter)
- 1/2 cup ground flax seed
- 1/2 cup chocolate chips (optional, but I didn’t use them this time around)
- 1/3 OR 1/4 cup raw honey (I found 1/3 to be too sweet for my taste)
- 1 tsp vanilla (I was out, so I omitted this)
Pumpkin Bread

Preheat oven to 350. Grease two loaf pans
- 1 (16oz) can pumpkin
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. cloves
- 1/4 tsp. ground ginger
- 1 tsp. vanilla extract
- 2/3 cup water
- 3 cups sugar
- 3 large eggs
- 3/4 cup vegetable oil
- 4 cups self-rising flour
Buttermilk-Blueberry Breakfast Cake

1. Preheat the oven to 350ºF
- 1/2 cup unsalted butter, room temperature
- 2 tsp. lemon zest or more — zest from 1 large lemon
- 7/8 cup* + 1 tablespoon sugar**
- 1 egg, room temperature
- 1 tsp. vanilla
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. kosher salt
- 2 cups fresh blueberries
- 1/2 cup buttermilk
- 7/8 cup = 3/4 cup + 2 tablespoons
- This 1 tablespoon is for sprinkling on top

Classic Italian Lasagna

Preheat the oven to 350 degrees
- Red Sauce:
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 cloves fresh garlic, finely minced (see garlic tutorial here)
- 1/2 large onion, diced (about 1/2 cup)
- 8 ounces mushrooms, chopped
- 2 (8-ounce) cans tomato sauce
- 1 (6-ounce) can tomato paste
- 1 (14.5-ounce) can diced tomatoes, undrained
- 2 teaspoons Italian seasoning (or a mix of dried oregano and basil)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- White Sauce:
- 3 cups milk (not skim, I used 1%)
- 5 tablespoons flour
- 4 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 9 lasagna noodles, boiled for half the time on the box (or use 12 of the no-boil noodles, of which I far prefer the Barilla brand)
- 1 pound ground turkey
- 1 pound mozzarella cheese, shredded
- 8 ounces Parmesan cheese, shredded
Chicken Broccoli Alfredo Stuffed Shells

Baked Jumbo Pasta shells stuffed with, chicken, broccoli, Alfredo sauce, cheddar and parmesan
- 1 (16 ounce) jar alfredo sauce
- 2 cups cooked chicken, shredded
- 2 cups cooked brocolli, chopped
- 1 cup shredded cheddar cheese
- 1/4 cup shredded parmesan
- 21 jumbo pasta shells, cooked
- 1 1/2 – 2 cups spaghetti sauce (optional, but I love the combination of alfredo with tomato sauce!)
Crispy Cheddar Chicken

This recipe for Crispy Cheddar Chicken makes a tasty dinner that's easy to put together
- CHICKEN:
- 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup milk
- 3 cups cheddar cheese, grated
- 1 teaspoon dried parsley
- SAUCE:
- 1 (10 ounce) can cream of chicken soup
- 2 tablespoonssour cream
- 2 tablespoons butter
Chicken Ranch Pizza

*Alternatively, use Sargento's Pizza Cheese Place pizza stone in the lower third of the oven
- 1 prepared (12-inch) pizza dough
- 1/4 cup ranch dressing
- 1 cup shredded mozzarella cheese*
- 1 cooked chicken breast, cut into bite-sized pieces
- 6 slices bacon, cooked crisp, crumbled
- 1 tomato, seeded and diced small
- 1/4 cup sliced green onions
- 1 cup shredded cheddar cheese*
Cherry Salad

First, completely drain the crushed pineapple
- 1 can - Cherry pie filling (usually only comes as 24oz)
- 2/3 can of Sweetened Condensed Milk (usually only comes as 14 oz) (I use it all!)
- 1 can of Crushed Pineapple (usually only comes as 8 oz)
- 2/3 bag Mini Marshmallows
- 1 cup Chopped Pecans (optional)
- 16-24 oz Cool Whip
