Key Lime Bars

GREAT FOR COOKOUT SWEETS!
- Crust:
- 5 ounces animal crackers (about 2 1/2 cups animal crackers)
- 3 tablespoons packed light brown sugar
- Pinch salt
- 4 tablespoons butter, melted
- Filling:
- 2 ounces cream cheese, softened to room temperature
- 1 tbsp grated fresh lime zest (from about 2 limes)
- 1 can (14-ounce) sweetened condensed milk
- Pinch salt
- 1 large egg yolk
- 1/2 cup fresh lime juice (from about 3-4 regular limes or 20 Key limes)
- Garnish (optional)
- 3/4 cup shredded coconut, toasted
Lasagna Soup

Heat olive oil in a large pot over medium heat
- for the soup:
- 2 tsp. olive oil
- 1-1/2 lbs. Italian sausage
- 3 c. chopped onions
- 4 garlic cloves, minced
- 2 tsp. dried oregano
- 1/2 tsp. crushed red pepper flakes
- 2 T. tomato paste
- 1 28-oz. can fire roasted diced tomatoes
- 2 bay leaves
- 6 c. chicken stock
- 8 oz. mafalda or fusilli pasta
- 1/2 c. finely chopped fresh basil leaves
- salt and freshly ground black pepper, to taste
- for the cheesy yum:
- 8 oz. ricotta
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. salt
- pinch of freshly ground pepper
- 2 c. shredded mozzarella cheese
Perfect Potato Salad

GREAT FOR COOKOUT!
- Dressing:
- 2 cups mayonnaise (I use Best Foods/Hellmans Light Mayo with great results)
- 4 tablespoons powdered buttermilk
- 2/3 cup water
- 1 1/2 teaspoon dried parsley
- 1 teaspoon salt
- 1 1/2 teaspoons minced dried onions
- 1 1/2 teaspoons garlic salt
- 1 teaspoon seasoned salt
- 1 teaspoon ground black pepper
- 2 tablespoons mustard
- The recipe calls for powdered buttermilk but if you have fresh buttermilk, eliminate the 4 tablespoons powdered buttermilk and 2/3 cup water from the recipe and substitute 2/3 cup fresh buttermilk.
- Salad:
- 5 pounds potatoes (I prefer to use red potatoes because I like their firm, velvety texture)
- 1 cup sliced olives
- 10 hard-boiled eggs*, diced

To freeze the chili, cool to room temperature first
- 2 lbs. Ground beef
- 1 medium or large onion, diced
- salt and pepper
- 80 oz. of tomato juice or 1 1/2 large cans (subject to how thick or fluid you prefer your chili)
- 29 oz. can of whole tomatoes
- 2- 15.5 oz. cans of kidney beans (rinsed and drained)
- 1/4 c. brown sugar, packed
- 1/4-1/3 c. chili powder

In a large mixing bowl, sprinkle the yeast over the water and let it stand until bubbly, 5 to 10 minutes
- For the cinnamon-sugar coating:
- 1 package active dry yeast (2 1/4 tsp)
- 1/4 cup warm water
- 3 Tbsp. unsalted light butter, melted
- 2/3 cup low-fat sour cream
- 3 Tbsp. sugar
- 1 large egg
- 1 tsp. vanilla extract
- 2 1/2 cups all-purpose flour, plus more for kneading
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 2/3 cup packed light brown sugar
- 2 tsp. cinnamon
- 6 Tbsp. unsalted light butter, melted
- For the vanilla glaze:
- 1 1/4 cups powdered sugar
- 1 Tbsp. unsalted light butter, melted
- 1 Tbsp. milk
- 1 tsp. vanilla extract

- 1 whole wheat tortilla
- pizza sauce
- 2/3 cup fat free mozzarella cheese or 2/3 cup part-skim mozzarella cheese
