Preheat the oven to 400 degrees
- 2 tablespoons canola or vegetable oil, divided
- 1 medium onion, thinly sliced
- 1 red bell pepper, seeded and thinly sliced
- 1 poblano pepper, seeded and thinly sliced
- 2 cups shredded leftover beef roast (you could also use chicken or pork)
- 8 8-inch flour tortillas
- 1 cup (4 ounces) shredded pepper jack, Monterey jack, or cheddar cheese

- 2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
- ¼ cups Chopped Onion

- 1 whole Jalapeno, Quartered And Sliced Thin
- ¼ teaspoons Sugar
- ¼ teaspoons Salt
- ¼ teaspoons Ground Cumin

- 1/4 cup low-fat yogurt (Greek yogurt recommended)
- 3/4 cup applesauce
- 2 tablespoons peanut butter or PB2 (powdered peanut butter)
- 1/2 teaspoon cinnamon
- 1-2 teaspoons honey, optional (or substitute preferred sweetener)
