Southwest Rice and Bean Salad with Sweet and Spicy Dressing

- Salad:
- 5 cups cooked rice, warm or at room temperature (white, brown, wild rice or a combination!)
- 2 teaspoons salt
- 1 (15-oz.) can black beans, drained and rinsed
- 1 (15-oz.) can pinto beans, drained and rinsed
- 2 cups cooked, cubed chicken
- 1 (12-oz.) can corn, drained
- 4 green onions, chopped
- Dressing:
- 1/4 cup fresh lime juice
- 2 tablespoons red wine vinegar
- 2 tablespoons packed brown sugar
- 2/3 cup canola oil
- 4 pickled jalepeno pepper rounds (found in the glass jars next to the olives, usually)
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Note: this salad is so adaptable. I’ve added 1/2 cup chopped fresh cilantro, subbed red onions for the green, doubled the dressing (just because!), and my favorite variation was made with a combination of wild and brown rice.
Cranberry and Avocado Salad with Candied Spiced Almonds and Sweet White Balsamic Vinaigrette - Honest Cooking

For the dressing; combine all ingredients in a pint sized glass jar and shake well to dissolve sugar
- Ingredients for the dressing:
- 1 cup (60g) sugar
- 1 1/2 tablespoons poppy seeds
- 1 1/2 tablespoons sesame seeds
- teaspoon paprika
- 2 teaspoons dried mustard
- 1 tablespoon minced sweet onion
- teaspoon sea salt
- teaspoon freshly ground black pepper
- cup (120 ml) white balsamic vinegar
- cup (70 ml) vegetable oii
- cup (70 ml) extra virgin olive oil
- Ingredients for the salad:
- 12 ounces (340g) baby spinach, arugula, field greens
- 1 small bunch cilantro, washed and dried, leaves removed whole from stems (discard the stems or use for another recipe)
- 2 medium avocados, peeled and halved
- cup (115g) dried cranberries
- cup (115g) Candied Spiced Almonds (see recipe)
- Ingredients for the almonds:
- 5 cups (600g) sliced almonds, or a 1 pound package
- cup (100g) sugar
- 3 tablespoons butter
- 2 teaspoons cinnamon
- 1 teaspoon cumin*
- 1-1 1/2 teaspoons smoked paprika* – some smoked paprikas are quite hot, if you don’t like “hot”, just use 1 teaspoon and they will be mildly spiced.
- 1 teaspoon vanilla
- sea salt
- The cumin and the smoked paprika give just a hint of mysterious, delicious flavor – even though these are savory spices, these almonds are still wonderful served with sweets like ice cream or yogurt.
PRETZEL BITES

Take a thawed roll. Cut it in four equal sections
- Texas size Rhodes Frozen roll dough *as many as you like – each roll makes four bites
- coarse salt, parmesan, garlic, cinnamon & sugar
- Vanilla glaze (optional)
- VANILLA GLAZE
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 tablespoon melted butter
- 1 tsp. vanilla extract
- CHEDDAR DIP
- 1 Tablespoon butter
- 1 Tablespoon all purpose flour
- 1 cup milk
- 1 1/2 to 2 cups of grated Cheddar Cheese.

- 3 garlic cloves, finely chopped
- 1/2 cup bread crumbs

- 1/2 tsp ground coriander
