Lettuce Wraps

  • 2 small chicken breasts cut into very small cubes
  • 1 T. olive oil
  • 2-3 cloves of garlic minced
  • 1 T. Chinese five spice
  • 3 T. soy sauce
  • 1 t. ground pepper
  • 1 - 2 t. red chili flake
  • 1 T. fresh ginger (or 1 t. ground ginger)
  • 1 cup of chopped eggplant
  • 2 small chopped gala apples (peel on)
  • 4 chopped green onions
  • 1/2 head of butter lettuce (or iceberg)

Step 1

Heat olive oil in a large pan on medium high heat. Add garlic and when it begins to brown, add chicken. When chicken is almost brown, add five spice, ginger and ground pepper. Add eggplant and apples. Add soy sauce and stir. Cook about 2 minutes or until both start to become translucent. Add green onions and cook another minute. Serve in lettuce leaves.
