Ingredients
- 5 oz pumpkin puree
- 1 scoop 100% whey protein
- 3 eggs
- 1/4 cup chopped pecans or walnuts
- 1/2 t. baking soda
- 1 T. pumpkin pie spice
- 1 T. almond or coconut flour (optional if want to make batter thicker)

Preparation
Step 1
In a large bowl mix all ingredients until smooth. Cook in a pre-sprayed skillet on medium high temperature until bubbles form on the surface. Turn the pancake over and cook until dark golden brown.
Serve with honey, agave nectar, or 100% maple syrup. (I eat mine plain.)
