Pumpkin Banana Muffins with Apples & Cinnamon

Please meet pumpkin banana muffins made with Greek yogurt, chopped apples, cinnamon, and, not least importantly, on
- 4 tablespoons unsalted butter, very soft, room temperature
- 1 cup regular white sugar
- 2 eggs
- 2 very ripe bananas, mashed
- 1/2 cup Greek yogurt
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour, sifted
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 cups sliced apple chunks, or about 2 medium size apples (cored), or 1 large size apple (cored)
Drip Beef Sandwiches

Sprinkle the chuck roast with salt and pepper
- One 4-pound chuck roast
- Salt and black pepper
- 3 tablespoons butter
- 2 tablespoons canola oil
- 2 cups beef broth

- For the crumb topping:
- 8 Tablespoons (1 stick) unsalted butter
- 1/3 cup granulated sugar
- 1/3 cup dark brown sugar
- 3/4 teaspoon ground cinnamon

Crockpot French Onion Soup

Set your crock pot on high, then add onions, garlic, brown sugar, butter, salt and balsamic and mix until combined
- 4 medium sweet onions, thinly sliced
- 3 garlic cloves, minced
- 4 tablespoons of butter
- 2 tablespoons balsamic vinegar (I used my favorite Fustinis!)
- 2 tablespoons brown sugar
- 3 tablespoons flour
- 8 ounces of beer

- Two 28-ounce cans whole tomatoes, drained of their juices
- 1 tablespoon olive oil
- 1 tablespoon light brown sugar
- 4 carrots, peeled and chopped
- 2 shallots, quartered
- Salt and freshly cracked black pepper
- 3 tablespoons unsalted butter
- 1/2 teaspoon crushed red pepper
- 2 cloves garlic, minced

- 2 tablespoons dry sherry
- One 28-ounce can crushed tomatoes
