Cauliflower Tabouli
By Ellan
Mix in large bowl. Season with salt and pepper
- 1 head of cauliflower, grated, grain size
- 2 plum tomatoes, diced
- 1/3 cup lemon juice
- 3 tab. olive oil
- 2 tab. soy sauce
- 2 scallions, chopped
- 1 bunch of parsley
- 2 tab. mint, chopped
- salt and pepper
French Dressing

Blend thoroughly in shaker
- 1 can of tomato soup
- 3/4 cup vinegar
- 1 cup vegetable or olive oil
- 1/2 cup sugar
- 1 garlic clove, chopped
- 1 teas. paprika
- 1 teas. onion salt
- 1 teas. celery salt
- 1 teas. dry mustard
- 1 teas. black pepper
- 1 tab. Worcestershire sauce
Pork Marsala

Cut tenderloin into 4 equal pieces
- 1 (1pd.) pork tenderloin
- 1 tab. butter or margarine
- 1 tab. vegetable oil
- 1 clove garlic, minced
- 1/2 cup dry red wine
- 1/2 cup marsala wine
- 1 tab. tomato paste
- 1/2 pd. fresh mushroom cap
- 1 tab. fresh chopped parsley
- Hot cooked noodles or rice
Truffles

Use a chef's knife to chop the chocolate as finely as possbile; this will help it melt quickly and evenly
- For the Ganache:
- 21 oz. bittersweet chocolate
- 18 oz. (generous 2 cups) heavy cream
- 2 oz. (4 tab. ) unsalted butter, cut into pieces, softened
- 2 oz. (1/4 cup) orange liqueur or raspberry vodka (opt.)
- For the Coating:
- 3 lbs. bittersweet chocolate, chopped
- 2 cups Dutch-process cocoa powder, sifted
- 2 1/2 cups shredded coconut, toasted
- 2 cups nuts, toasted and finely chopped

Preheat oven at 300. Combine crumbs and butter; pat firmly on bottom of 9 inch spring form pan
- 1 1/2 cup finely crushed creame filled chocolate sandwich cookies (18)
- 1/4 cup butter, melted
- 3 (8oz.) pkg. cream cheese, softened
- 1 (14 oz.) can eagle brand sweetened cond. Milk
- 3 eggs
- 2 teas. vanilla extract
- 1 cup mini chocolate chips
- 1 teas. flour
Ranch Pork Chops

- 4 pork chops
- ranch seasoning dry mx
- 1 can of cream of chicken
- 1 can of water

- 3 cups Apple Cider
- 3 cinnamon sticks
- 15 whole cloves
- 8 cups water
- 8 green tea bags (black tea works as well)

Grilled Balsamic Portobello Mushrooms with Soft Polenta

- 6 Portobello caps, ribs removed, stems removed and reserved
- 1/4 cup Balsamic Vinegar
- 1/2 cup Marjoram (chopped)
- 2 garlic cloves (finely grated)
- 1 pinch of red pepper flakes
- 1/2 cup extra-virgin olive oil
- 1 tab. salt
- 1 cup quick-cooking Polenta
- 1 tab. honey
- Aged Balsamic vinegar (to serve)
- 1/4 cup parsley (chopped)
- salt and ground black pepper
Crockpot Italian Wedding Soup

Add all the ingredients, except chicken broth and pasta, in a bag and freeze flat
- 12 oz. frozen mini meatballs or deconstructed (1 lb. ground meatloaf)
- 1 small onion, diced
- 1/2 pd. carrots, peeled and sliced thinly
- 1 head of escarole, thinly sliced
- 1 tab. worcestershire sauce
- 1 teas. onion powder
- 1 teas. garlic salt
- 1 teas. montreal steak seasoning
- 8 teas. chicken bullion granules
- 8 cups of hot water, *not needed until the day of cooking. Omit if using chicken broth.
- 1/2 cup uncooked pasta, *not needed until the day of cooking.
