Frisee bacon and lentil salad
By Ellan
In a blender, combine the garlic and sliced shallot, vinegar, mustard, olive oil, salt and pepper
- 2 garlic cloves, sliced
- 3 shallots, 1 sliced and 2 minced
- 1/4 cup sherry vinegar
- 1 tbs. Dijon mustard
- 3/4 cup extra virgin olive oil
- 3/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 4 thick-cut bacon slices, chopped
- 2 cups french green lentils
- 2 cups chicken broth
- 1 bunch frisee, tough stem removed
- Teaspoon of balsamic glaze
Spanish Spice Rub

Whisk all of the ingredients in a bowl
- 3 tab. Spanish paprika
- 2 teas. ground cumin
- 2 teas. dry mustard
- 2 teas. ground fennel seeds
- 2 teas. kosher salt
- 1 teas. coarsely ground pepper
Brain Cookies with Blood Glaze

Preheat oven to 350. Line 2 large baking sheet with parchment paper and set aside
- Brain cookies:
- 2 sticks unsalted butter, softened
- 1 cup sugar
- 3 cups all-purpose flour
- 1/2 teas. baking soda
- 1/2 teas. salt
- 2 large egg
- 1/2 cup very finely chopped nuts
- 1 teas. vanilla extract
- 5 About 5 drops red food coloring
- 9 About 9 drops blue food coloring
- Blood Glaze:
- 2 cups confectioner's sugar
- 35 to 40 drops red food coloring
Kicked Up Bacon-Cheese Mashed Potatoes

Place potatoes and 1 teas
- 4 baking potatoes, like russets, about 3 lbs., peeled and cut into 1-inch pieces
- 1 3/4 teas. salt
- 1/2 cup heavy cream
- 4 tab. butter
- 1/4 teas. ground black pepper
- 8 slices bacon, cooked crisp and crumbled
- 1/2 lb. sharp cheddar cheese, grated
- 1/4 cup sour cream
- 1/4 cup chopped fresh chives
- Freshly ground black pepper
Thai Chicken Wrap with Spicy Peanut Sauce

Heat a grill pan over high heat
- Salad:
- 3 (6 oz. ) chicken breasts
- 1 tab. soy sauce
- 1 tab. vegetables oil
- 1 tab. grill seasoning
- 1/2 seedless cucumber, peeled, halved lengthwise and thinly sliced on an angle
- 2 cups fresh bean sprouts
- 1 cup shredded carrots
- 3 scallions, sliced on an angle
- 12 leaves basil, chopped or torn
- 3 tab. chopped mint leaves
- 1 tab. sesame seeds
- 2 teas. sugar
- 2 tab. rice wine vinegar or white vinegar
- salt
- Spicy peanut sauce:
- 1/4 cup room temperature chunky peanut butter ,soften in microwave if it has been refrigerated
- 2 tab. soy sauce
- 1 tab. rice wine vinegar or white vinegar
- 1/4 tea. cayenne pepper
- 2 tab. vegetable oil
- 4 (12-inch) flour tortilla wraps
Basic Pizza Dough

In a large bowl, combine yeast and 1 1/2 cup flour with 1 cup lukewarm water, stirring to mix well
- 1 package active dry yeast or 1/4 oz. compressed yeast
- 1 1/2 to 3 cups unbleached all-purpose flour
- 2 tab. olive oil, plus more for greasing bowl.
- 1/2 teas. salt
- 1/2 teas. creole seasoning
Campanelle with Mushroom and Kale

Bring a large pot of lightly salted water to a boil
- 1 lb. campanelle
- 6 tab. unsalted butter
- 1 1/2 mixed mushrooms (such as shiitake, cremini and button), sliced
- 1 large shallot, finely diced.
- 12 oz. fresh kale (1 large bunch), stems removed and thinly sliced (about 12 cups)
- 3 tab. all-purpose flour
- 3 cups 1% milk
- 1 teas. salt
- 1/4 pepper
- 1/8 teas. ground nutmeg
White Sea Bass with Orange-Fennel Relish

Combine first 4 ingredients, 1/8 teas
- 2 tab. extra-virgin olive oil
- 1 tab. fresh lemon juice
- 1 tab. fresh orange juice
- 1/2 teas. grated orange rind
- 3/8 kosher salt, divided
- 3/8 freshly ground black pepper, divided
- 1 (12 oz. ) fennel bulb
- 1 cup fresh orange sections
- 1/4 cup sliced red onion
- 2 oz. halved Castelvertrano olives
- 4 (6 oz.) white sea bass fillets
- 1 1/2 teas. butter
Chocolate Icing

Melt chocolate and butter
- 2 cups of powdered sugar
- 1/2 stick of butter
- 2 squares unsweetened chocolate
- 1/2 teas. vanilla
- 1 small can of evaporated milk
Mini-Chocolate Chip Cheesecake

Heat oven to 350. Paper-line or spray with cooking spray, 30 muffin cups
- 1 1/3 cups graham cracker crumbs
- 1/3 cup sugar
- 1/4 cup hershey's cocoa
- 1/3 cup of butter, melted
- 2 cups (12oz.) Hershey mini chocolate chips, semi-sweet
- 3 pkg. of cream cheese, softened
- 1 can of (14 oz.) condensed sweetened milk
- 3 eggs
- 2 tab. vanilla extract
