- 1 1/2 cups softened butter
- 1-8oz. pkg. softened cream cheese
- 3 cups sugar
- 1 1/2 teas. vanilla extract
- 3 cups sifted all purpose flour
- 1/8 teas. salt
Chocolate Chip Cookies

Cream butter, sugar, brown sugar and vanilla until fluffy
- 1 cup of butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 teas. vanilla
- 2 eggs
- 2 1/4 cups unsifted all-purpose flour
- 1 teas. baking soda
- 1/2 tea. salt
- 2 cups (12 oz.) semi-sweet chocolate chips
- 1 cup chopped nuts
Sweetheart Cake

Squeeze lemons for 1/4 cup of juice
- Cirtus Glaze:
- 2 med. lemons
- 1 large orange
- 1 cup of cake flour
- 3/4 cup sugar
- 1 1/2 teas. salt
- 2 tab. salad oil
- 1 teas. vanilla extract
- 4 large egg yolks
- 8 large egg whites
- 1/2 teas. cream of tartar
- 1 cup thawed frozen,
- light whipped topping
- strips of orange peel
Pot Sticker Soup

Combine broth, vinegar, soy sauce, and garlic in a 5 to 6 quart pan; cover and bring to a boil over high heat
- 6 cups fat-skimmed chicken broth or vegetable broth
- 2 tab. seasoned rice vinegar
- 1 tab. soy sauce
- 2 teas. minced garlic
- 1 to 1 1/4 lbs. frozen pork, chicken, or vegetable potstickers (20 to 25)
- 1 lb. baby bok choy, rinsed
- 1/2 cup shredded carrot
- 1/4 cup thinly sliced green onions
- 1/4 cup chopped fresh cilantro
- 1 tab. toasted sesame oil
Christmas Coffee Cake

- Topping:
- 1 cup of butter
- 1 cup of sugar
- 2 eggs
- 1 teas. of vanilla
- 2 cups of all-purpose flour
- 1 teas. baking soda
- 1/2 teas. salt
- 1 teas. of baking powder
- 1 cup of sour cream.
- 1/4 cup of sugar
- 1 tab. of cinnamon
- 1/2 cup of chopped pecans
Greek Couscous

Bring 1 1/2 cup water to a boil in a med
- 1 1/2 cup water
- 1 cup uncooked couscous
- 1/2 teas. dried oregano
- 1 1/2 cup diced plum tomatoes
- 1 cup diced peeled cucumber
- 1/3 cup crumbled feta cheese
- 1/4 cup small ripe olives, halved
- 3 tab. diced red onion
- 1 (15 1/2 oz.) can chickpeas, drained
- 1/4 cup water
- 3 tab. lemon juice
- 1 1/2 tab. extra-virgin olive oil
- 1/4 teas. salt
- 1/4 teas. coasrsley ground pepper
Sirloin on a stick

Mix marinade in a bowl. Add sirloin, toss to coat
- Marinade:
- 1/2 cup soy sauce
- 1/2 cup dry red wine
- 1 tab. minced fresh ginger (opt.)
- 1 tab. minced garlic
- 2 tab. chopped cilantro
- freshly grounded black pepper to taste
- 1 1/2 lbs. lean beef sirloin, cut into 12 pieces, about 2 inch cubes.
Gordon Ramsay's Jerusalem Artichoke Risotto with Scallops

Heat a few tab. of olive oil in a pan, add the rice and stir for 2-3 minutes so the rice absorbs the oil
- 2 tab. olive oil
- 1 cup risotto rice
- 2 cups hot chicken stock
- 1 cup jerusalem artichoke, washed and sliced

- 1/3 cup cream
- 1/4 cup parmesan cheese, grated
- sea salt

- 8 large scallops, sliced
- 1/4 cup sugar
- 1/4 cup sherry wine vinegar
Grilled Shrimp and Noodle Salad

- 14 oz. flat rice noodles
- 1/2 cup fresh lime juice
- 1/3 fish sauce
- 1/2 packed light brown sugar
- 2 garlic cloves, finely chopped
- 1 to 2 teas. Asian chili sauce
- 1 lb. med.- large shrimp, peeled and deveined
- 1 med. bunch asparagus, trimmed
- 5 oz. shiitake mushrooms,trimmed
- 1 med. carrot, shredded
- 1/2 cup fresh cilantro
