Greek Chicken Breasts

Lift skin gently from chicken breasts without detaching it; place 2 garlic cloves under skin of each breast
- 4 bone-in chicken breasts; halves
- 8 garlic cloves, crushed
- 2 tab. olive oil
- 1 teas. salt
- 1 teas. pepper
- 2 teas. dried oregano
- 4 lemons, thinly sliced
- 16 to 60 kalamata olives, pitted
- 1 (4 oz.) container crumbled feta cheese
- Garnishes: lemon slices, fresh oregano springs
Wild Mushroom Spoon Bread

Preheat oven at 400. Heat oil in a large nonstick skillet over med
- 2 teas. vegetable oil
- 1 cup chopped onion
- 1 1/2 teas. minced fresh thyme
- 1 garlic cloves, minced
- 2 cup sliced stiitake mushroom caps
- 2 cup sliced cremini mushroom
- 2 cup water
- 3/4 teas. salt
- 1 cup cornmeal
- 1 cup 1% low fat milk
- 2 large egg yolks, lightly beaten
- 4 large egg whites (at room temperature)
- Cooking spray
Mushroom -Fontina tart

You can make the mushroom saute ahead of time

- 1 sheet of frozen puff pastry
- Add-purpose flour for dusting
- 1 egg, beaten
- 1/2 cup finely grated fontina cheese (1 3/4 oz.)
Magic Cookie Bars

- 1 (14 oz.) can eagle sweetened cond. milk
- 1 cup (6 oz.) semi-sweet chocolate chips
- 1 (3 1/2 oz.) can flaked coconut (1 1/3 cup)
- 1 cup chopped walnuts
Shrimp and Chicken Etouffee

- 2 tab. vegetable oil
- 1 lb. Andouille sausage, diced
- 3 lbs. Skin-on, bone-in chicken thighs
- Kosher salt
- 1/2 cup plus 2 tab. all-purpose flour
- 4 stalks celery, diced
- 1 large onion, diced
- 1 green bell pepper, chopped
- 4 garlic cloves, minced
- 1/4 teas. cayenne pepper
- 4 cups low-sodium chicken broth
- 1 lb. med. shrimp, peeled and deveined
- 2 tab. dry sherry
- Freshly ground black pepper
Praline Pound Cake

- Pralines:
- 2 sticks butter, cut into cubes, softened
- 1 1/4 cups sugar
- 5 egg separated
- 1 teas. vanilla
- 2 cups flour
- 1/2 teas. baking powder
- pinch of salt
- 1 cup crumbled pralines
- 2 tab. dark rum
- 2 pints praline ice cream
- 1 cup warm caramel sauce, store bough
- shaker of powdered sugar
- springs of fresh mint
- 1/2 lb. light brown sugar
- Pinch of salt
- 1/4 cup plus 2 tab. evaporated milk
- 1 1/2 tea. butter

Lemon Garlic Chicken

Melt Butter in large skillet over med-heat
- 1/4 cup butter or margarine
- 6 chicken breast halves, skinned an d boned.
- 4 cloves garlic, crushed
- 1/2 cup chicken broth
- 1/2 cup white wine
- 3 tab. lemon juice
- 1/4 teas salt
- 1/8 teas pepper
- cooked noodles or rice
Roasted Garlic Mayonnaise

Squeeze pulp from garlic bulb into a blender; add 1/4 cup oil and remaining ingredients
- 1 roasted garlic bulb
- 1/2 cup canola oil, divided
- 1/3 cup egg substitute
- 1/2 teas. dry mustard
- 2 tab. white wine vinegar
Fresh Horseradish Sauce

In a saucepan, combine the horseradish, shallots, garlic, mustard, and cream
- 3/4 cup freshly grated horseradish or bottled, if not prepared with cream
- 3 tab. minced shallots
- 2 teas. minced garlic
- 2 teas. Dijon mustard
- 1 1/2 cup heavy cream
- salt and white pepper
Mediterranean Torte

- 1 (32 oz.) pkg. frozen bread dough, thawed
- 2 (10 oz.) pkg. frozen chopped spinach, thawed
- 1 (14 oz.) can artichoke heart quarters
- 1 (12 oz.) jar marinated red pepper strips
- 1 (6 oz.) can pitted ripe olives
- 1 lb. small mushrooms
- 8 oz. sliced salami
- 8 oz. thinly sliced provolone cheese
- 8 oz. thinly sliced cooked ham
- 1 large egg
- 1 tab. water
