O'Charley's Baked Potato Soup

Dice unpeeled red potatoes into 1/2-inch cubes
- 3 lbs. red potatoes
- 1/4 cup butter, melted
- 1/4 cup flour
- 2 quarted half-n-half
- 1 lb. block Velveeta cheese, melted
- White pepper, to taste
- Garlic powder, to taste
- 1 tsp. hot pepper sauce
- 1/2 lb. bacon, fried crisply
- 1 cup cheddar cheese, shredded
- 1/2 cup fresh chives, chopped
- 1/2 cup fresh parsley, chopped
Cracked Wheat Salad

Place bulgar in a large bowl and add 1 1/2 cups boiling water
- 1 1/2 cups bulgar wheat (fine-med. grind)
- 1 1/2 cups seeded and chopped tomatoes
- 1 cup chopped seedless cucumber
- 3/4 cup chopped fresh parsley
- 1/4 cup sliced green onions
- 1 tsp. grated lemon peel
- 1/2 cup fresh lemon juice
- 1/4 cup extra-virgin olive oil
Champagne Risotto

- 4 thin slices prosciutto
- 3 cups reduced-sodium chicken broth
- 12 asparagus spears, cut diagonally into 1-inch pieces
- 2 tab. butter, divided
- 1 shallot, finely chopped
- 3/4 cup Arborio rice or med. grain white rice
- 3/4 cup Champangne
- 1/4 cup freshly grated parmesan cheese
- 1/4 teas. salt
- 1/2 teas. freshly grounded black pepper
Peking Chicken

Sauce can be used on Pork Loin
- For Sauce:
- 1 cup hoisin sauce
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1/4 cup rice vinegar
- 1 tab. grated peeled ginger root
- 2 lb. skinned, boned chicken breast halves
- vegetable cooking spray
- 1 tab. dark sesame seed oil, divided
- 8 (8-inch) flour tortillas
- 1 cup sliced green onions
- sliced water chestnuts
- sliced mushrooms
- low fat sour cream
Fall Acorns

Spread peanut butter on flat side of chocolate kiss and place on flat side of peanut butter cookie
- 1/4 cup peanut butter
- 24 chocolate kisses
- 12 mini peanut butter cookie sandwiches (split apart)
- 24 butterscotch chips or mini chocolate chips
Caramel Icing

Boil 2 minutes when it bubbles all over, not a really hard boil, start timing 2 minutes
- 1 stick of butter (real butter)
- 1 cup light brown sugar, packed
- 1/4 cup evaporated milk
- 2 cups powdered sugar
- 1 teas. vanilla
Egg Foo Young

Heat 1 tab. vegetable oil in a skillet over high heat
- 2 tab. vegetable oil, plus more for frying
- 6 oz. white mushrooms, trimmed and sliced
- 1 1/2 teas. sugar
- 1 cup low-sodium chicken broth
- 3 1/2 teas. soy sauce
- 1 tab. cornstarch
- 1/2 med. onion, thinly sliced
- 6 oz. Canadian bacon, diced
- 1/2 cup frozen peas, thawed
- 1 bunch scallions, thinly sliced
- 6 large eggs, beaten
- 1 teas. toasted sesame oil
Broccoli Casserole

Preheat the oven 425. Cook the broccoli according to the package
- 2 pkg. chopped frozen broccoli, cook according to pkg.
- 1 med. onion, chopped
- 1 cup of mayo
- 1 can of cream of mushroom
- 2 eggs, beaten
- 1 cup of shredded cheddar cheese, plus 1/2 cup
- Crumbled crackers, any kind you like
Chicken Cordon Bleu

Place chicken breast half on wax paper
- 4 split boneless chicken breast
- 8-1 oz. ham slices
- 8-1oz. Swiss cheese slices
- 3 tab. minced parsley
- 1/4 teas. pepper
- 1 egg, beaten
- 1/2 cup Italian bread crumbs
- 1/4 cup. butter
- 1 can of cream mushroom soup
- 1-8oz. sour cream
- 1/3 cup sherry
- 1 can sliced mushroom
Cornbread Dressing

Toast bread for crumbs. Crumble in large bowl
- 4 cups breadcrumbs (leftover biscuits or loaf bread)
- 4 cups egg cornbread (use several eggs to make, use white meal)
- 1/2 cup hopped onion
- 1 cup chopped celery
- salt and pepper to taste
- 1 teas. sage
- 3 cups chicken broth or turkey
- 1/3 cup butter or margarine
- 1 cup milk
