Hurricane Cocktails

Mix all the ingredients in a cocktail shaker, and shake to dissolve the sugar
- 2 oz. light rum
- 2 oz. dark rum
- 1 oz. grenadine, or passion fruit syrup
- 1 oz. fresh orange juice
- 1 oz. sour mix, or fresh lime juice
- 1 teas. superfine sugar
- Orange wedges, for garnish
Basil and Garlic Dressing

Combine first 6 ingredients in container of electric blender
- 1/2 cup white wine vinegar
- 1/4 cup lemon juice
- 8 fresh basil leaves
- 3 cloves of garlic
- 1/4 teas. salt
- 1/4 teas. pepper
- 3/4 cup olive oil
Olive Bread

Dissolve yeast and sugar in warm water in a small bowl; let stand 5 minutes
- 1 pkg. dry yeast
- 2 teas. sugar
- 1/2 cup warm water (105 to 115)
- 3 cup bread flour, divided
- 1/2 cup cornmeal
- 3/4 cup plain fat-free yogurt
- 1/2 cup chopped green olives
- 1 tab. olive oil
- 1 teas. dried rosemary
- 3/4 teas. salt
- Cooking Spray
Hidden Valley Ranch Buffalo Wings

Preheat oven at 400. Dredge chicken in salad dressing mix
- 24 chicken wings/drummettes
- 1 envelope Hidden Valley Ranch Dressing
- 1/3 cup of butter, melted
- 1/4 cup hot pepper sauce (less, if desired)
- 3 tab. vinegar
- 1/2 teas. paprika
Jicama Matchstick Fries

- 3 to 6 cups vegetable oil (more or less depending on pot size)
- 1 med. jicama, peeled
- salt
- onion powder
- garlic powder
- paprika
Apple-cream Cheese Cake with Praline Frosting

For the Cream Cheese Filling: in a med
- For the Cream Cheese Filling:
- 8 oz. cream cheese, softened
- 1/4 cup butter, softened
- 1/2 cup granulated sugar
- 1 large egg, lightly beaten
- 2 tab. all-purpose flour
- 1 teas. vanilla
- pinch of salt
- For the Batter:
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup firmly packed light brown sugar
- 2 teas. ground cinnamon
- 1/4 teas. ground nutmeg
- 1/2 teas. ground all-spice
- 1 teas salt
- 1 teas. baking soda
- 3 large eggs, lightly beaten
- 3/4 cup canola oil
- 3/4 cup unsweetened applesauce
- 1 teas. vanilla
- 3 cups peeled and finely chopped apples, a combination of Granny and Gala
- 1 cup finely chopped walnuts, toasted, plus 2-3 tab. for garnish
- For the Frosting:
- 1/2 cup firmly packed light brown sugar
- 1/4 cup butter
- 3 tab. milk
- 1 teas. vanilla
- 1 cup powdered sugar
Grilled Swordfish

In a small bowl, combine oil, lemon juice, 1/2 teas
- 1/4 cup olive oil
- 2 tab. lemon juice
- 1 teas. salt
- 1/2 teas. ground black pepper
- 2 cloves of garlic,chopped
- 1/4 cup chopped mint leaves
- 2 tab. fresh oregano leaves, chopped
- 4 swordfish or tuna
Layered Salad

In salad bowl layer all ingredients in the order given
- 1 head of lettuce
- 1 onion, cut into rings
- 3 stalks celery, sliced
- 1 chopped green pepper
- 10 oz. frozen peas, thawed
- 1 pint Hellman's mayo
- 4 hard boiled eggs, grated
- 8 slices bacon, crumbled
- 6 tab. Parmesan cheese
Beef Steamed Dumplins

For Filling; in a med. mix bowl, stir together hoisin and corn starch
- Dumpling wraps:
- 2 cups of all purpose flour
- 1/2 teas. salt
- 2/3 cup boiling water
- 1/4 cup cold water
- or you could use store brought
- Meat Filling:
- 2 tab. hoisin sauce or sodium reduced soy sauce
- 1 teas. corn starch
- 1 cup finely chopped Bok Choy
- 1 med. carrot, shredded
- 2 tab. thinly sliced green onion
- 2 tab. nipped fresh cilantro
- 1/4 teas. salt
- 3/4 lb. lean ground beef
- Soy Sauce for Dipping:
- 1/4 cup rice vinegar or white vinegar
- 1/4 cup sodium reduced soy sauce
- sprinkle with thinly sliced green onions
Corn salad

Combine all ingredients; mix well
- 1 (16 oz. ) pkg. shoe corn, cooked and drained
- 2/3 cup chopped green pepper
- 1/3 cup finely chopped celery
- 1/3 cup white wine vinegar
- 1/3 cup vegetable oil
- 1/4 cup sugar
- 2 green onions chopped
- 2 tab. chopped fresh parsley
- 3/4 teas. seasoned salt
- 1/4 teas. garlic powder
