Chicken Parm Meatball

Preheat oven to 400°F, setting rack to upper third part of oven
- 1 1/4 pounds ground chicken
- 1/2 cup breadcrumbs
- 2 tablespoons chopped onion
- 1 tablespoon chopped parsley
- 1/2 cup Pecorino (or Parm)
- salt to taste
- pepper to taste
- 1 clove garlic, minced
- 1 teaspoon fennel seeds
- 1 egg, whisked
- zest of half a lemon
- 3 tablespoons olive oil
- 1 14-ounce can storebought pizza sauce (such as Don Pepino’s)
- 4 about 4 ounces fresh mozzarella (a dozen thin slices; to pile on the cheese would be to cancel out the fact that you were virtuous enough to replace fatty beef with lean chicken)
Queso Smothered Chicken

Grilled Tex-Mex chicken smothered in queso and served over a well seasoned southwestern orzo
- 1 bottle Lawry’s Baja Chipotle 30 minute marinade (or Mesquite)
- 4 chicken breasts, boneless , pounded to an even thickness
- 1 tablespoons olive oil
- 1 cup orzo
- 2 cups chicken broth
- 2 tablespoons tomato paste
- 2 teaspoons Pampered Chef Southwestern Seasoning or chili powder
- 8 ounces Velveeta, diced
- 1 can Ro-Tel diced tomatoes and green chilies
Whoopie Pie Filling

Beat egg whites until foamy
- 2 egg whites
- 4 tbs crisco
- 1 stick margarine
- 3 cups 10x sugar
- 4 tbs milk
- 1 tsp vanilla
Smothered Pork Chops

1 Make rice as directed on package
- 1 cup uncooked regular long-grain white rice
- 1 tablespoon olive oil
- 2 cloves garlic, finely chopped
- 6 bone-in pork loin chops, 3/4-inch thick (about 2 lb)
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 can (18.5 oz) Progresso® Vegetable Classics French onion soup
- 2 tablespoons cornstarch
Overnight Apple Oatmeal

- 2 apples, sliced
- 1/3 cup brown sugar
- 1 teaspoon cinnamon
- 2 cups oats (I use Quaker old fashioned oats)
- 4 cups water
Maryland Crab Cakes

MIX all ingredients except butter until well blended
- 3 cans (6 oz. each) crabmeat, well drained, flaked
- 1/2 cup KRAFT Real Mayo Mayonnaise
- 15 RITZ Crackers, crushed (about 1/2 cup)
- 1 egg
- 1 Tbsp. GREY POUPON Dijon Mustard
- 1 Tbsp. lemon juice
- 1-1/2 tsp. Worcestershire sauce
- 1 tsp. chopped fresh parsley
- 1/2 tsp. dry mustard
- 1-1/2 tsp. butter or margarine
Easy Monster Cookies

Heat oven to 375 degrees. In large bowl, stir all ingredients except candies until soft dough forms
- 1 pouch Betty Crocker chocolate chip cookie mix
- 1 pouch Betty Crocker peanut butter cookie mix
- 1 1/2 cups quick cooking oats
- 1 cup butter or margarine, softened
- 3 eggs
- 2 cups candy coated milk chocolate candies
Grilled Picnic Nachos

Heat gas or charcoal grill
- 5 cups tortilla chips
- 1 can (15 oz) progresso black beans, drained, rinsed and mashed
- 1 can (4.5 oz) old el paso chopped green chiles, drained
- 2 tsp old el paso taco seasoning mix
- 2 plum tomatoes, chopped
- 2 medium gren onions, sliced(2 tbs)
- 2 cups finely shredded Colby Monterey Jack cheese blend (8 oz)
Secret Recipe Chocolate Chip Cookies

- 1/2 cup rolled oats regular or quick
- 2 1/4 cups all purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1 cup (2 sticks) butter, softened
- 3/4 cup firmly packed brown sugar
- 3/4 cup granulated sugar
- 2 tsp vanilla extract
- 1 tsp lemon juice
- 2 eggs
- 3 cups semisweet chocolate chips
- 1 1/2 cups chopped walnuts
Restaurant Style Salsa

- ◾1 can (28 Ounce) Whole Tomatoes With Juice
- ◾2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
- ◾1/4 cup Chopped Onion
- ◾1 clove Garlic, Minced
- ◾1 whole Jalapeno, Quartered And Sliced Thin
- ◾1/4 teaspoon Sugar
- ◾1/4 teaspoon Salt
- ◾1/4 teaspoon Ground Cumin
- ◾1/2 cup Cilantro (more To Taste!)
- ◾1/2 whole Lime Juice
