- 1 3/4 cups Progresso® chicken broth (from 32-oz carton)
- 5 cups uncooked dumpling egg noodles or wide egg noodles (8 oz)
- 1/2 cup water
Chicken Enchilada Pasta

1. Preheat oven to 350 degrees F
- 1 12 ounce packagedried jumbo shell macaroni
- 3 large green and/or red sweet peppers, chopped
- 1 1/2 1 1/2
- cups chopped red onion
- 1 fresh jalapeno chile pepper, seeded and chopped
- 2 tablespoons vegetable oil
- 2 cups chopped cooked chicken
- 1 16 ounce canrefried beans
- 1/2 1/2
- 1 1/4 ounce packagetaco seasoning mix (3 Tbsp.)
- 2 10 ounce canenchilada sauce
- 1 8 ounce shredded Mexican-style four-cheese blend
- 1 cup sliced green onions
- 2 cups nacho cheese-flavored tortilla chips, crushed (2 oz.)
- Avocado dip and/or sour cream
Overnight Cinnamon Apple Oatmeal

Spray a 3 1/2 quart or larger slow cooker with non-stick cooking spray
- Non-stick cooking spray
- 2 large tart apples (such as Granny Smith or Pink Lady), chopped
- 1 1/2 cups skim milk
- 1 1/2 cups water
- 1 cup whole grain oats
- 3 tablespoons packed dark brown sugar
- 2 tablespoons butter
- 1 tablespoon cinnamon (more or less to your taste)
- 2 tablespoons milled/ground flaxseed
- 1/4 teaspoon kosher salt
- Additional Toppings
- 1/4 cup dried fruit (raisins, cranberries)
- 1/4 cup chopped nuts (walnuts, almonds, pecans)
Simply Spicy Grilled Chicken

1. Stir the picante sauce and barbecue sauce in a small bowl
- 3/4 cup Pace® Picante Sauce
- 3/4 cup barbecue sauce
- 2 pounds chicken parts, skin removed
- 1 cup uncooked regular long-grain white rice
- 2 medium green onions, sliced (about 1/4 cup)
- Orange slices (optional)
- Fresh thyme leaves (optional)
Chicken Pot Pie Soup

1.In a large pot, melt butter over medium high heat
- 2 cup chicken, cooked and diced
- 3 Tbsp unsalted butter
- 1/2 yellow onion, diced
- 3 celery stalks, diced
- 1 cup fresh broccoli florets, chopped
- 1/4 cup all purpose flour
- 3/4 cup chicken broth
- 1 cup heavy cream
- 1 cup milk (I used skim)
- pinch of crushed red pepper flakes
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 cup cheddar cheese, shredded
- 1/2 package pie crust (I used Pillsbury), thawed
Chicken and Stuffing Casserole

Cook chicken; cool, then cut into bite-sized pieces
- 6-8 boneless, skinless chicken breasts (I use about 1.5-2 pounds)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 cup milk
- 1 stick butter
- 1 (8 ounce) package Pepperidge Farm Stuffing Mix
Chicken Supreme Pasta Bake

Place the onion, green pepper, mushrooms, garlic and butter in a skillet and saute for 2 minutes
- 16 ounces pasta, cooked al dente
- 2 cups grilled chicken, cubed
- 1/2 cup chopped onion
- 1/2 cup diced green pepper
- 1/2 cup diced mushrooms
- 1 teaspoon minced garlic
- 3 Tablespoons butter
- 3 Tablespoons flour
- 2 cups chicken stock
- 1 cup plain greek yogurt
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded mozzarella cheese
- 1 - 14.5 ounce can diced tomatoes
- salt and pepper

Meatball Sub on a Stick

1.Preheat oven to 375° 2
- 1 lb lean ground turkey
- 1/2 cup Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 Tbsp dried Oregano
- 1 Tbsp dried Basil
- 1 Tbsp dried Parsley or 1/4 cup fresh chopped
- 1/2 tsp Crushed Red Pepper
- 2 cloves garlic, minced
- 1 can Pillsbury Original breadsticks
- 1 cup shredded mozzarella cheese
- 12 (10"-12") wooden skewers
- Marinara sauce for dipping
