Chicken Salad {Traditional and Kick-Your-Can}

Mix all ingredients together in a medium bowl
- 2 1/2 cups roasted chicken (I used a rotisserie chicken), diced
- 6 green onions, sliced including some of the green tops
- 3/4 cup sour cream (I used a Mexican sour cream)
- 1/4-1/2 teaspoon chipotle chile powder, depending on heat preference
- 1/2-1 whole, small jalapeno pepper, seeded and minced
- 1/4 teaspoon salt
- 1/8 teaspoon cumin

Brown ground beef with onion and garlic
- 1 1/2 lbs. lean ground beef
- 1 onion, chopped
- 1 clove garlic, minced
- 1 (15 oz.) can tomato sauce
- 1 can stewed tomatoes
- 1 tsp. oregano
- 1 tsp. Italian seasoning
- salt/pepper
- 10 oz. frozen spinach, thawed (I used fresh spinach)
- 16 oz. bowtie pasta, cooked
- 1/2 cup parmesan cheese, shredded
- 1 1/2 cup mozzarella, shredded
Hearty Black Bean Soup

Heat the salsa in a large saucepan over medium heat, stirring often for about 5 minutes
- 1 cup tomato salsa
- 2 - 15 oz. cans black beans, drained and rinsed
- 2 cups (1 can) chicken broth (or vegetable broth)
- 1 tsp. lime juice (or more to taste)
- 2 tablespoons chopped fresh cilantro
- sour cream (optional)
TOMATO BASIL SOUP

Mix together tomatoes, chicken broth, basil, sugar, and garlic
- 2 cans (28-ounces each) crushed tomatoes
- 2 cups chicken broth
- 1 1/2 Tbs. basil
- 1/2 tsp. sugar
- 1/2 tsp. garlic (or if you're not lazy like me, fresh garlic, to taste)
- 1 cup heavy cream
- 1/2 cup butter
Corn Dog Muffins

I made these for two picky young boys who stayed with us while their dad was in the hospital
- 2 (8 1/2 ounce) packages cornbread mix
- 2 tablespoons brown sugar
- 2 eggs
- 1 cup milk
- 1 (11 ounce) can whole kernel corn, drained
- 5 hot dogs, chopped
- 1 cup cheddar cheese, shredded
Mexi-Chicken Campanelle Dinner

1. Preheat oven to 350 degrees F
- 1 lb campanelle pasta
- 1/4 teaspoon McCormick Gourmet Ancho Chile Pepper
- 1/4 teaspoon McCormick Gourmet Smoked Paprika
- 1/4 teaspoon McCormick Gourmet Garlic Powder
- 1/4 teaspoon McCormick Gourmet Sicilian Sea Salt
- 1/4 teaspoon McCormick Gourmet Coarse Grind Black Pepper
- 1 1/2 lbs (fryer) chicken breast with rib meat
- 2 tablespoons extra virgin olive oil
- 2 tablespoons extra virgin olive oil
- 1 cup finely chopped white onion
- 1 tablespoon minced garlic
- 1 cup finely chopped sweet peppers
- 1 1/2 cups Salsa Verde, mild
- 1 cup petite diced tomatoes from can
- 1/2 cup heavy cream
- 1/4 cup fresh chopped cilantro
Chicken and Black Bean Green Enchilada Rice Bake

1. Preheat oven to 350 degrees F
- 2 cups white long grain rice
- 2 1/2 cups cooked, shredded chicken breast
- One 15-ounce can mild green enchilada sauce
- One 4-ounce can sliced black olives
- One 15-ounce can diced tomatoes
- 1/2 cup sour cream
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon McCormick Gourmet Roasted Ground Cumin
- One 15-ounce can black beans, drained and rinsed
- 2 cups shredded cheddar cheese
Burgundy Pork Chops

Cook chops in olive oil in skillet just until browned on both sides
- 4 boneless pork chops
- 1 tbsp olive oil
- 1 large shallot, chopped
- 2 cups mushrooms, sliced
- 1 tbsp flour
- Salt and pepper to taste
- 1 cup burgundy wine
4 cheese spinach dip

reheat oven to 400 degrees F
- 8 Ounce of cream cheese
- 1 Teaspoon of garlic POWDER
- 1/3 Cup freshly grated Parmesan cheese
- 2 Tablespoon freshly grated Romano cheese
- 2 Tablespoon very finely chopped red bell pepper
- 2 green onion (scallion) white and green finely chopped
- 1 Cup of wilted fresh baby spinach, squeezed dry and chopped (or frozen and thawed)
- 1/2 Cup grated medium Cheddar cheese
- a pinch of cayenne and paprika
Philly Cheeseteak sloppy joes

In large skillet over medium-high heat brown the ground beef with the onion
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 1 green pepper, chopped
- 2 tablespoons steak sauce
- 1 cup beef stock
- A few shakes of Worcestershire sauce
- 1 tablespoon corn starch
- 1/2 cup cold water4 hamburger buns
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- 1 cup provolone, shredded
